Herring: salting and pickling fish recipes

Fish dishes must be included in the diet of every person, albeit not every day, but at least once a week. And it doesn’t matter at all what kind of preferences a person has - be it red fish, river fish or herring: there are recipes for making tasty and healthy fish for everyone.

I would also like to mention herring. Of course, you won’t cook anything from it, but for salting it’s the most! Although you can fry herring in breading, fry and mix with lemon juice, mustard and dill, and so on. Many do not even imagine how much can be done from an ordinary herring. But still, salted herring is a classic, time-tested and not lost among other delicious dishes.

It's nice to come home and see on the table still steaming boiled potatoes and salty herring. Some people like saltier, others like slightly salted herring. The recipe for this or that dish can be found without problems: in the cookbook or on the Internet. Here is one of the simplest recipes for salted herring. We take three pieces of medium herring frozen, prepare a brine: in a liter of water, when boiling, drop a glass of salt, two teaspoons of sugar, a couple of bay leaves, peppercorns. The brine must be cooled, otherwise the herring in it will not only be salted, but also boiled. Then we lower the herring into it and set it in a cool place for twelve hours. The indicated time is best reduced for lovers of slightly salted fish to eight to ten hours. So our herring is ready, you don’t need to look for recipes anymore, you will definitely like it!

Besides salted herring, marinated herring is very tasty at home. The recipe for its preparation is as follows: we clean the salt herring, rinse, remove large bones and remove the skin. Next, we cut the herring into neat small pieces and lay on the bottom of a flat container. We prepare a marinade from water, refined oil, vinegar or lemon juice (acid), dill, ground black pepper. Then pour the herring with the prepared marinade and let it soak for several hours. Other spices can be added to herring if desired. Recipes of such a herring must be in service with every housewife. After all, where is the guarantee that the herring bought in the store will be to your taste? And your own production of herring, the recipes of which you yourself have chosen, will always delight your family and friends who come to visit.

But even if a tasteless herring was bought at the store, it can be "brought to mind." For example - marinate to your taste with onions, peppers and sour cream. Or use a herring to prepare a well-known and beloved "fur coat". But herring under a fur coat is not the only salad of this fish, you can make fish vinaigrette, Kerch salad and even herring in sugar! And herring is also good for cooking fish oil, or otherwise - herring caviar. An unfamiliar and unusual dish for many is jellied herring, so you can safely put it in front of the guests - they will be pleasantly surprised.

The advantage of pickled herring is that in it the bones are practically split and therefore it is pleasant and not troublesome. In a salty herring, of course, there are much more bones. But if you cook herring at home, then you can remove almost all the bones from it.

You can pickle herring in various ways. Recipes of various authors may contain all kinds of ingredients. For example, some add mustard, while others prefer mayonnaise marinade. You can add slices of lemon, leaves of parsley, cilantro or even mint.
