Traditional Greek slimming yogurt is made from sheep’s milk, to which yogurt culture is added. Yogurt is fermented, and then excess whey is removed. But since we can hardly find sheep’s milk, we’ll use ordinary milk — cow’s milk, preferably domestic.

So, how to cook Greek yogurt? The recipe is quite simple. You will need milk and yogurt sourdough. As a starter culture, you can use any natural yogurt with a short shelf life - Bulgarian yogurt, yogurt , matsun, acidified sour cream or products called “Activia” without additives.

Now an important nuance: sour cream does not contain Bulgarian sticks, so it ferments milk worse. Further, the starter culture for making homemade yogurt - it does not matter if you use yogurt or sour cream - should not contain starch, thickeners and other additives. Also note that yogurt should not be shaken, as this makes it more liquid.

How to cook Greek yogurt

Greek slimming yogurt is prepared in the same way as regular yogurt. Only one step is added - whey decantation.

1. Initially, you need to boil milk and wait until it cools to room temperature. Then the milk needs to be filtered to remove the foam.

2. When the milk has cooled to a temperature of 35-40 degrees, add starter or ready-made yogurt to it.

3. Fermented milk is put in the yogurt maker for 9 hours.

4. Ready yogurt cannot be stirred, it must be carefully poured into a sieve, after covering the last with clean gauze. Then the yogurt is covered with a film or a lid and left in the refrigerator until the whey drains.

5. After 6-10 hours, Greek slimming yogurt is ready to eat. By density, the product resembles Adyghe cheese.

Serum from yogurt can be used for baking, for example, for the preparation of lush cakes with filling. By the way, it is undesirable to store Greek yogurt for a long time, since this product is completely natural, does not contain preservatives and stabilizers, and therefore quickly deteriorates.
