The idea of instant cooking of tasty and piquant snacks has long attracted many housewives. Such affordable dishes include “fast” zucchini marinated with honey - a decent snack, as they say, in no time. Here the first, young, salad-colored fruits appear on the markets - they just ask to be prepared. And I want to do it in a hurry so that you can not wait, but rather serve the dish to the table.
Zucchini marinated with honey: recipe
The ingredients for this delicious dish are extremely simple. You need to take: a kilogram of fresh young zucchini, a head of garlic, dill, olive oil (preferably, but if not at hand, you can use any vegetable), a couple of large spoons of wine vinegar, a similar amount of liquid natural honey (not synthetic, but natural), spices in the form of ground black pepper, salt.
Cooking
- Quickly marinated zucchini with honey are prepared as follows. We wash the vegetables and dry them thoroughly. Cut lengthwise into thin and long plates (this action can be done with a special vegetable slicer if it is in your kitchen tool kit, but if it is not, use a simple sharp knife).
- Another point: if the zucchini is not too young, then the core and the skin need to be cleaned.
- Salt the fruits well and set them aside. Zucchini marinated with honey should “tear” and soak in saline for further cooking.
- Finely chop the dill. Press the garlic with the appropriate appliance. Some people prefer to rub it on a grater.
- In a separate container we combine garlic, spices, vegetable oil, honey with vinegar. All relevant ingredients must be mixed well.
- From a bowl with zucchini, which settled, drain the juice. We fill in generously chopped dill and pour in the cooked marinade. Mix everything thoroughly again.
- We remove the refrigerator down (where the temperature is positive) and insist for at least 3 hours. Periodically, it is desirable to mix several times. And so, the delicious marinated marrows with honey are ready to eat, and, of course, this appetizer can decorate almost any table: festive and everyday.

Zucchini with honey and garlic for the winter
This tasty and moderately spicy delicacy can not only be eaten right now, but also prepared for the winter in glass jars, rolled up or twisted with a lid. Agree, it will be very nice to open such a dish on a festive, for example, New Year's table. By the way, for those who follow their figure, and vegans, and fasting, it is fully suitable, as it does not contain animal proteins. Another argument: in the summer and early autumn, when zucchini costs a mere penny, the production of this delicacy will cost you quite cheaply, and in winter the grandmothers in the market will not add up to a jar of prices. - If you close, then more: take five kilograms of young zucchini. If the vegetables are already slightly overripe, you need to select seeds from them and peel them. We use young ones in their original form.
- We will need as ingredients: for each kilogram of fruit, 2 tablespoons of liquid honey. If the honey is candied or too thick, dilute it with a small amount of hot water. Another kilogram of zucchini (squash and zucchini) half a glass of vegetable oil, a few cloves of garlic, salt and pepper to taste. To put fresh greens or not (as in the “fast” zucchini with honey and garlic, which are prepared for today's eating)? On the one hand, in a rolled up state it will still lose its aroma and taste. And on the other - it will nevertheless give the necessary spice and pungency. We decided to put, then a bunch of dill, a bunch of cilantro, parsley. Everything needs to be cut as small as possible.
- We prepare zucchini, as in the first version of the recipe. Cut into thin rings so that even a small can fit well into the neck. Put the semi-finished product in a bowl and salt. Do not be afraid to overdo it, usually they take on as much salt as they should, but you definitely can’t do without it. We leave the product to give natural juice.
- In the meantime, we’ll start preparing the marinade. Mix chopped herbs and crushed garlic with honey, vegetable oil and the juice of one lemon. In the resulting marinade, immerse the zucchini and mix. We set down the refrigerator for at least three to five hours. After this, the dish can be consumed immediately. It is stored in a cold place for more than a month without any damage to the taste and quality characteristics.

Roll up
If you want to prepare a treat for the winter, then everything is very simple. In a large saucepan, put the mass on the fire and boil on the smallest fire for 15 minutes. After we lay out in jars sterilized by the traditional method and roll up the lids. Store in a dark and cool place. Open on holidays.
