Greek Soup "Fax" - a popular dish in Greece

In Russia, lentil dishes are not so often prepared . Perhaps this is due to the fact that few know what to combine this product with. Adding lemon juice, vinegar or tomatoes can dramatically change the taste of lentils. I would like to share a recipe for one of the most popular dishes in Greece. So, today we have Greek Fakes soup on the menu.

In general, traditional Greek cuisine complies with all the rules of a healthy diet. Firstly, the Greeks use various vegetables, seafood, fish for cooking, secondly, meat and fish are mainly baked or cooked on charcoal, thirdly, salads are seasoned not with high-calorie mayonnaise, but with freshly squeezed olive oil, yogurt or lemon juice. In addition, local high-quality products are used to prepare the dressing, there is no question of any preservatives.

In Greece, there is a very small amount of factory-made food, however, there are quite a lot of private creameries and wineries. Therefore, the consistency of yogurt is more reminiscent of sour cream, and all vitamins are preserved in olive oil . For the manufacture of cheese, fresh goat, cow or sheep milk is used. The Greeks are used to adding various spices to almost every dish: mint, parsley, tarragon, pepper, coriander and garlic. So, let's still stop at the popular Greek dish.

What will you need to make lentil soup?

We proceed to the preparation of the necessary ingredients:

  • 5 tbsp. tablespoons of sunflower oil.
  • Sugar - 1 teaspoon.
  • 2 tbsp. tablespoons of tomato paste.
  • 300 ml of vegetable broth.
  • 5 cloves of garlic.
  • 35% cream - 3 tsp.
  • 200 g of green lentils.
  • 2 red onions.
  • Black pepper.
  • 4 carrots.
  • Salt.
  • Dried sage.

Soup "Fax": recipe

  1. First, let's take a lentil: wash it, fill it with cold water and send it to a small fire for about 15 minutes. The water level should be about 4 cm above the cereal.
  2. While the lentils are cooked, peel the vegetables, chop the onion into cubes, chop the garlic (you can just crush it with a knife), cut the carrots lengthwise into quarters, and cut them into slices.
  3. Pour oil into the pan (olive is preferred), heat well and fry the onions and garlic on it, a little later add carrots, sugar, season with coriander and sage. Cook the vegetables on low heat for about 10 minutes, not forgetting to stir occasionally.
  4. Add the hot broth, salt, tomato paste and fried onions, garlic and carrots to the lentils. We continue to cook our soup for another 20 minutes. The main thing is that the lentils become soft.
  5. Before you finish cooking, we check the Greek soup "Fax" for salt, add salt and season with black pepper if necessary.
  6. Remove the saucepan from the heat, pour into plates and decorate with olives.

How to serve?

Greek soup Fakes is usually served with a slice of feta cheese, in addition, a teaspoon of olive oil is poured into the finished dish. In Greece, a rather large amount of vinegar is also added. If you do not transfer this product to the spirit, you can refuse such a service. The fact is that vinegar enriches the aroma of lentil dishes.

I would like to consider another option for cooking a favorite dish in Greece. So, prepare the following products:

  • Olive oil for frying.
  • Half a stem of celery.
  • 12 glasses of water.
  • Chopped garlic - about 2 teaspoons.
  • Finely chopped onion - 2 tbsp. spoons.
  • Pearl barley - half a glass.
  • 2.5 cups of lentils.
  • Salt.
  • Canned Tomatoes - 400 g.
  • Black pepper.
  • 100 g frozen spinach.
  • Dry mint.
  • 0.5 teaspoon oregano.
  • Yogurt.

In a 5-liter pan (preferably with a heavy bottom), pour the oil and heat it over medium heat. There we send onions, celery and garlic. It will take no more than 8 minutes to cook.

Pour in water and start cooking lentils and barley. When the liquid boils, turn down the heat, cover with a lid, continuing to cook for about an hour. The main thing is that lentils and pearl barley become soft.

We cut the tomatoes and send them to the pan, add salt, mint, pepper, oregano and tomato liquid there. Increase the heat to medium and bring to a boil, then reduce to a minimum and continue to cook without a lid.

It remains to add the spinach and boil everything for 5-7 minutes. No need to bring to a boil. Pour the finished dish into plates and add one spoonful of yogurt to each.
