It is generally accepted that potatoes are most often a side dish to the main dish, complementing it. Moreover, the cooking method can be quite diverse: boiled, fried, stewed, baked. But it happens that a potato takes on a unique function and acts as both a main course and a side dish. A universal option - potato patties with mushroom sauce, so to speak, all-inclusive, and most importantly - easy to prepare and tasty.
Let's prepare potato patties with mushroom gravy. Let's add a new design to the potato as a side dish, not forgetting that it is also the main course. To do this, we need the following ingredients: 1-1.2 kg of potatoes, 150 grams of boiled milk, 2 eggs, salt to taste, dill and parsley. Potatoes should be boiled in slightly salted water until fully cooked. Then pour hot boiled milk and soften the potatoes with a pestle. If lumps have formed, then additionally pass it through a sieve. The result should be a gentle and uniform potato mass. Cool the mass to a temperature of 40 ΒΊ so that it is comfortable to hold in hands. In a separate bowl with a mixer, beat the eggs. To beat better, put a pinch of salt. Pour the eggs into the potato mass, add the finely chopped dill and parsley, knead until smooth. The mass should be plastic, if suddenly the potato variety is not starchy, then you need to add a few tablespoons of wheat flour to bind moisture.
To prepare the filling, you will need the following ingredients: 200 grams of minced pork and 150-200 beef or chicken so that the filling is not too fat, but at the same time tender, the onion head, diced, salt and pepper to taste. All this is fry over low heat under a lid.
From a warm softened potato we form a medium-sized tortilla, put a teaspoon of fried minced meat in the middle and pinch the edges. Roll potato patties with minced meat in semolina (there may be bread crumbs) on both sides. If there are sesame seeds, then you can sprinkle cutlets with them, the taste will be more refined. Heat the pan over a fire, add 2-3 tablespoons of olive oil, wait for it to boil, and put the patties out. Now the crust of cutlets is provided. Fry them on both sides to a uniform golden color. Potato patties with minced meat are ready.
To get potato patties with mushroom sauce, it remains to cook mushroom sauce. For this we need: 300 grams of fresh or dried mushrooms, 2 tablespoons of wheat flour, 200-250 grams of cream, 1 head of onion, salt to taste. Thoroughly clean the fresh mushrooms from the fillets, while cutting off the places damaged by the worm. If in doubt about their edibility, then immediately discard. Leaf mushrooms must be soaked in water for better cleansing. After that, they can be boiled. It is better to do this in an enameled pan, put the onion together with mushrooms in water - this is a kind of indicator of the edibility of your forest product. If the bulb darkens during cooking, do not take any chances. When the water with mushrooms boils, it must be drained, poured fresh and cook until tender. Pour the flour into a hot pan and bake it when the flour gets dark, in small portions, stirring slowly, pour in 250 grams of mushroom broth and leave to simmer over low heat under a lid. When the gravy begins to thicken, put the mushrooms cut into thin plates into the pan and finely chopped the onion finely golden until golden. In a thin stream, stirring to avoid lumps, pour in the cream. Bring everything to a boil and hold for another 5 minutes. If desired, the sauce can be brought to a homogeneous consistency in a blender.
