The following is a step-by-step recipe for royal cheesecake with cottage cheese.

Required Components

This will require the following products:

  • homemade cottage cheese - half a kilogram;
  • creamy margarine - 100 grams (it is recommended to keep it in the freezer until preparation during use);
  • vanillin - 1 sachet;
  • chicken egg - 4 pieces;
  • white flour of the highest grade - one and a half glasses;
  • semolina or starch - 30 grams;
  • granulated sugar - one and a half glasses;
  • baking soda - half a teaspoon.

As well as table salt.

Preparing the filling

Cooking toppings

The first thing you need to start cooking the recipe for the royal cheesecake is the filling. For this, cottage cheese is used. In this case, the granularity of the product must be avoided in order to obtain a homogeneous curd mass. It is because of this that it is recommended to use homemade cottage cheese in this recipe. However, it may not always be at hand, and therefore it is allowed to use ordinary store curd, but with the following conditions:

  • you need to check the cottage cheese before you buy it, so as not to purchase an acidic product;
  • be sure to pay attention to freshness, color and smell;
  • in the case of using such cottage cheese in the preparation of royal cheesecakes according to the recipe from this article, the product must be grated at least twice with a sieve.

Sugar must be added to the prepared curd. Standard crystalline granulated sugar is allowed. However, using powdered sugar is the best option.

At this stage, vanillin, corn or potato starch and a small pinch of table salt must be added to the mixture. In the absence of starch, semolina can be used. Now you need to mix all the ingredients until a homogeneous mass is obtained.

Now you need to beat the eggs. At this stage, it is recommended to separate the proteins from the yolks. This trick will give the filling tenderness. Next, each element must be processed. The yolks are mixed with a little sugar until the mixture turns white. After that, they are added to the previously prepared mixture of cottage cheese. Proteins must be whipped until a dense foam appears. This can be done either manually, using a whisk, or using a mixer. To speed up the process, it is recommended to add a pinch of salt and a drop of lemon juice before processing the proteins. After this, whipped proteins are added to the bulk and gently mixed.

Finished filling

If desired, nuts or raisins can be added to the filling.

Test preparation

Sand mixture for the base

After completing the preparation of the filling of the royal cheesecake, you can begin to prepare the dough, which will be located at the base of the cake. To do this, take the amount of flour indicated in the recipe for the royal cheesecake and sift it several times. This procedure will allow you to get clean flour without any garbage.

Half a glass of sugar is added to the processed ingredient, after which the resulting mixture is thoroughly mixed.

The margarine taken from the freezer is chopped into small pieces with a knife or chopped to a state of large shavings on a grater. After that, it is added to the flour.

Making crumbs for the base

At this stage, it is necessary to quickly grind the resulting mixture with your hands to the state of small crumbs.

Roasting process

Since this is a recipe for royal cheesecake in the oven, it is necessary to prepare a deep and round shape. To do this, the bottom of the dishes used is covered with parchment, which prevents the cake from sticking to the walls of the mold. This will also allow you to quickly and easily remove the finished baking.

Next, you need to divide the mixture of flour and margarine into two parts. The third part is postponed separately. In the future, it will be used for the top of the cake. The remaining crumbs are placed in a baking dish. Now it is necessary to form the basis of the same thickness from it. This is achieved due to its uniform distribution along the bottom and walls of the mold.

Now, on the prepared basis, the curd mixture for the filling is laid out, which must be leveled. After leveling, the filling layer is sprinkled with previously crushed crumb.

It is necessary to preheat the oven to a temperature of 200 degrees. Upon reaching the required temperature, the cake is placed inside for 40 minutes. As soon as the specified time elapses, you must carefully pierce the cheesecake with a match. If it is dry - the cake is ready.

Royal cheesecake recipe in a slow cooker

Using a slow cooker to cook royal cheesecake with cottage cheese greatly simplifies the cooking process. This is due to the fact that, unlike the oven, the multicooker has the necessary modes that strictly control the baking process, which helps to avoid damage to the dish due to overexposure.

This recipe for a royal cheesecake is almost identical to making a pie in the oven, and therefore we will not repeat the process of preparing crumbs for the base of the dish and the curd for the filling. A list of required ingredients will also be omitted.

Component Preparation

Royal cheesecake in a baking dish

In order for the pie not to burn during the cooking process, it is necessary to grease the multicooker bowl with butter. In order not to make a mistake with the height of the pie, it is recommended to spread the oil to a level of about 3 centimeters from the bottom.

Now, as in the previous royal cheesecake recipe, you need to divide the crumbs prepared in advance into two parts: 2/3 and 1/3. Most of the crumbs are placed on the bottom of the multicooker bowl and are evenly distributed over the entire surface. In this case, it is necessary to slightly tamp the resulting base and form the edges of approximately 2.5 cm in height. Do not do it higher, as in the final form the cake can look extremely messy.

Next, in the resulting base, you need to place the previously prepared filling from the curd mass. It is necessary to ensure that the placed and aligned filling does not go beyond the boundaries of the previously formed sides.

Filling leveling

To complete the preparation, you need to place the remaining crumb on the already aligned filling. The best option is to gently and evenly sprinkle the surface of the pie.

Roasting

Now the bowl with the prepared cheesecake is placed in the multicooker itself. Cooking is necessary using the “Baking” mode with a standard time interval of 50 minutes or an hour. At the same time, the multicooker can independently set the time intended for this cooking mode.

At the end of cooking, remove the bowl with the pie from the slow cooker and leave to cool completely. It is recommended to leave the dish to cool for a couple of hours. Due to the fact that it will cool sufficiently slowly, the cheesecake will not fall. After the cake has completely cooled, you can get it out of the bowl. To do this, just turn the bowl on the stand for the pie or on the stand, which comes complete with a slow cooker, and then place on the dish. Further decorate of your own free will.

Thus, following the recipe for a royal cheesecake with a photo, you can cook an excellent treat!
