Carbonara pasta is one of the most famous and popular dishes of Italian cuisine. There is an opinion that for its proper preparation it is necessary to use purely specific ingredients, among which should be pancetta and Parmigiano Reggiano. At the same time, only an ethnic Italian can be a cook, since only he can convey the real taste of this dish. In this embodiment, a special paste "Carbonara" is described . The recipe (cooked at home) involves the use of simple ingredients, not specific products. At the same time, pancetta can be replaced with ordinary dried bacon with salt and spices, and instead of high-end cheese, use simple parmesan.
Ingredients
For Carbonara Pasta with Homemade Bacon you will need:
- spaghetti - 250g;
- high fat cream - 100ml;
- bacon - 150g;
- garlic - 1 clove;
- egg - 1 pc.;
- olive oil;
- Parmesan cheese - 25g;
Sauce
Initially, you need to cut the bacon with medium cubes or cubes. Then it is fried in olive oil, followed by the addition of finely chopped garlic. After a few minutes, add cream, salt and pepper. Boil the sauce before thickening, but not more than ten minutes.
Spaghetti
It is worth noting that the paste "Carbonare" should have the same temperature of the main components. Therefore, the sauce and spaghetti must be prepared at the same time. In this case, the finished paste is usually served in the state of "al dente" (this means that in the middle of the pasta there is a slightly hard core). To do this, take water in the amount of 1250 ml, pour it into the pan and slightly add salt. After the water boils, pasta is placed in it, which is cooked in literally 3 minutes.
Presentation
Carbonare pasta does not need to be dried or to use a colander. It is simply taken out of the water with special forceps and laid out on a plate in the form of a small nest. Cooked sauce is poured on top, which they try to place on all pasta. Next, sprinkle the dish with grated cheese, and spread the raw egg yolk in its center. In this case, the cheese and the egg should melt and "cook" in hot pasta.
Options
Carbonare pasta can be prepared using another technology. It involves mixing pasta with sauce, followed by the addition of cheese. In this form, it is laid out on a plate, and on top is decorated with a poached egg. You can also decorate the dish with a small sprig of greenery.
Supply and storage
Carbonare pasta is served only hot and as a main course. Red wine or fruit juice goes well with it. It should be noted that such a thing as the shelf life of a finished dish does not exist in Italian cuisine. According to professional chefs, everything should be served to the table only from under the knife, and only in rare cases, when the recipe involves mixing sauces based on herbs, a large temporary delay is allowed before serving. That is why Italian dishes are always fresh and prepared only with quality products.
