Harvesting takes place in the morning, but by noon all leaves with buds should be sorted right there. Not very bright leaves during this procedure are mercilessly deleted. At this point, the collected leaves immediately undergo natural fermentation (they are oxidized by the intervention of oxygen).

To stop the oxidation process, the raw materials are fried in small batches.
