Georgian salad: several recipes

At the words “Georgian salad”, a Russian person associates with a huge amount of spicy greens, fresh vegetables, various sauces with nuts and pomegranate seeds, as well as with Suluguni or Adygea cheese and olives. But no one will give you a clear single recipe. And this is right, because there are so many salads in Georgia. And they all have an amazing taste and a huge selection of vitamins.

№ 1. Georgian kebab salad

Peel two sweet peppers (ideally red and yellow) from seeds and cut together with two tomatoes and two cucumbers into slices. One hundred or a little more grams of Suluguni cheese is cut into cubes. Lettuce leaves should be washed and torn by hand. In a deep bowl we put leaves and vegetables, we throw pitted black olives (whole) and finely chopped herbs: basil, cilantro, dill. The amount of the last ingredients is chosen based on our own preferences. Season the dish with olive oil with a few sprays of balsamic vinegar. It is perfectly washed down with "Khvanchkara".

We cut three cucumbers and onions into circles, and three tomatoes into large slices. Put in a bowl. Blue basil and mint with any other herbs, to your taste, manually chopped on top of vegetables. In a blender, grind 40-50 g of walnut kernels, an incomplete teaspoon of salt, red pepper on the tip of a knife and chopped 2-3 cloves of garlic. Put the nut mixture in a separate bowl, add 2 tablespoons of wine vinegar and dilute with water so that the sauce has the consistency of liquid sour cream. 10-15 minutes before serving mix salad with sauce so that all ingredients have time to mix well.

№ 3. Georgian salad "Traditional"

Tomatoes for this dish (3 pieces) are cut into cubes. 200 grams of smoked sausage is cut into strips, and 100-150 g of hard cheese is rubbed on a coarse grater. Squeeze two cloves of garlic into a total mass, mix and let stand for 10 minutes. After that, season with mayonnaise mixed with fresh herbs to your taste. You can decorate such a cute dish with seeds.

№ 4. Hearty Georgian salad with beef

Due to its calorie content, it can be served as an independent dish as a cold dinner. 400 grams of beef tenderloin need to be boiled with herbs, cool and cut into small cubes. Boil two carrots in a peel and cut into circles. Fry 300 grams of mushrooms and chop coarsely. Add 300 g canned peas, 3-4 cloves of garlic squeezed under a press, a bunch of spicy greens. In a separate bowl we make the sauce: mix a jar of mayonnaise with 50 g of Tkemali, add a handful of ground walnuts, mix. Dressing our salad with sauce. Serve it only with pita bread or bread. Beef can be replaced with smoked chicken.
