Perepechi: recipe for Udmurt cakes

If you want to cook perepechi - the recipe for the national Udmurt dish is at your service. These are not ordinary pies with different fillings, as it might seem at first glance.

Perepechi: recipe for Udmurt minced pies

The appearance of these products can remind you of miniature pizza. For the filling, with which you can cook crosses (the recipe for the dough will be the same anyway), you can use crushed potatoes (beaten eggs are usually added to it), chopped cabbage, minced meat (mutton, pork or beef, as well as diet chicken), various mushrooms (pre-fried). Authentic Udmurt version of the filler for these products is a sauteed onion with a milk-egg mixture.

First prepare the dough from which you will make the cross. The recipe involves the use of sifted flour of the highest grade or rye (2 tbsp.). Also need 5 tbsp. margarine or any other fat, 3 eggs, a pinch of salt and a liquid (boiled water or milk, the amount depends on the moisture of the flour). The listed ingredients are designed for approximately six products. For minced meat, 1 liter of whole milk, 4 chicken eggs, greens and pre-fried minced meat (mashed potatoes, cabbage, mushrooms) are needed.

Mix the sifted flour with salt, pour beaten eggs and melted fat into it, add milk or water to make the dough soft and soft. Kneading it for a while, you should achieve the state in which it does not stick to your hands. Divide the dough into balls of equal size, make cakes of them no more than 2 mm thick, their diameter should be 9-10 cm. On the peppers, you need to form small sides, pinching the edges with your fingers. Spread the workpieces on a greased baking sheet (pan) immediately. On each pie lay out prepared meat, cabbage or mushroom stuffing, cover with herbs, pour egg and milk mixture. Bake these items at 200 degrees Celsius. In order for them to reach readiness, but not burned, it will take 15-20 minutes. Lubricate the prepared crossings with butter, eat them with kefir, broth or tea. Of course, they are tastiest when they’re hot.

Types of fillings

Standard meat is prepared by lightly frying fresh minced meat with onions. For a cabbage a quarter of an average head of cabbage should be finely chopped and stewed in butter if possible. Cooking time depends on the initial density of the vegetable. You may need to add water or broth to soften the cabbage. Then add salt, pepper, green onions. You can make sweet peppers with jam (it should not be too thin) for tea. Only in this case they should be done without milk-egg filling.
