The Uzbek way to prepare the dough is quite simple, so you can easily reproduce it in your kitchen:

  • Mix four cups of sifted wheat flour, 250 grams of boiled water and a little salt.
  • Knead the dough and divide it into several parts. Put the blanks in the refrigerator for half an hour.
  • Roll each piece into a sufficiently thin layer, and then grease them with melted margarine or fat.
  • Roll each blank with a roll, cut it into pieces again and roll it again.

The more times you repeat the specified sequence, the more layers will be in the finished test.

As we already said, Uzbek samsa can be prepared in different ways. However, the traditional dish is baked on charcoal in a tandoor (a special oven), and lamb, fat tail fat and a lot of onions are used as the filling. To simplify the process, we suggest baking samsa in the oven:

  • Make the dough according to the recipe described above.
  • For the filling, take 300 grams of lamb or beef fat (focus on your taste preferences), 300 grams of meat, three onions, salt, pepper and zira to taste. Dice all the ingredients and mix with spices.
  • You can choose any shape for samsa - it can be a square, circle or triangle. Cut the dough in circles or squares, put the filling inside and fasten the edges.
  • Put samsa on a baking sheet, greased with oil, with the seams down.
  • Beat the egg, brush it on the surface of the pies, and then sprinkle them with sesame seeds.

Bake samsa until the meat is completely cooked - about half an hour.

Delight your loved ones with a delicious seasonal dish. Recipe:

  • Put a spoonful of salt in a deep bowl, pour a glass of water and break the egg. Whisk the ingredients with a whisk. After that, add 500 grams of flour and knead the cool dough. Put the finished product on a cutting board, cover with a bowl and leave alone for a quarter of an hour.
  • Cut 200 grams of peeled pumpkin into a small cube.
  • Grind 70 grams of fat tail fat and add to vegetables.
  • Rub the zira in the palms and put to the filling. Stir the ingredients, add a little vegetable oil, salt and ground pepper.
  • Sprinkle flour on the table top, put the dough on it and mash it with your hands. After that, fold the layer in half, sprinkle it with flour and repeat the operation again.
  • Roll out the dough with a rolling pin quite thinly, grease the surface with vegetable oil and roll it with a roll. Cut the workpiece into twelve parts - this will be the basis for samsa.
  • Roll out each piece of dough with a rolling pin so that it is thicker in the middle and thinner at the edges. Put the filling in the middle and blind the edges so that the samsa turns out triangular.
  • Put the pies on a baking sheet.
  • Whisk the yolk with a little water and grease the baking surface with it.

After 20 minutes, delicious Uzbek samsa will be ready. Serve pastries with hot or cold drinks on the table.

This very simple recipe can be used in the form presented by us, or you can supplement the filling as you wish. Uzbek samsa, the photo of which you see above, is prepared as follows:

  • Make puff pastry from three glasses of flour, 250 grams of water and a small amount of salt. If you wish, you can purchase the finished product in the nearest cooking.
  • Peel and dice six medium potatoes. Add chopped fat, spices and salt to them.
  • Roll out the dough and cut into eight pieces. Give each workpiece a circle shape, center the filling and pinch the edges.
  • As usual, coat the surface with whipped yolk and sprinkle with sesame seeds.

Bake the treat for half an hour, until golden brown.

Samsa Uzbek "Lazy"

This unusual dish is easy to prepare for breakfast or evening tea for the whole family. Recipe for its preparation, read below:

  • Defrost 500 grams of puff pastry, roll it and cut into 16 squares.
  • Grind peeled potatoes, sausages and onions for the filling. Lightly fry food in vegetable oil and cool. Mix them with salt, ground pepper and any spices.
  • Put the filling on the dough and fasten the edges with an envelope. With a beaten egg, anoint the surface, sprinkle it with poppy seeds and sesame seeds.
  • After that, place the pies in a preheated oven.

In a few minutes, delicious pastries will flaunt on your table.

Samsa with minced meat

We want to share with you another interesting recipe for oriental cuisine. This time we will use a not quite traditional filling. However, the taste from this does not spoil at all - it recognizes our beloved Uzbek samsa. We will describe cooking in stages:

  • Grind five or six onions, mix them with 500 grams of minced meat, add fat (if any), salt and spices. Stir all the ingredients.
  • Make a simple dumplings dough, roll it out and grease with melted margarine or vegetable oil. Roll the workpiece into a roll and put it in the refrigerator for one hour.
  • When the time indicated by us passes, the roll can be pulled out and cut into small pieces. Shape the cakes into blanks, center the filling and pinch the edges.
  • Put the “triangles” on a baking sheet covered with baking paper, grease them with an egg, sprinkle with black and white sesame seeds.

Baking should be cooked in a well-heated oven for half an hour. Serve pies with tomato and spice sauce.

Samsa with Chicken

According to this recipe, the pies are tasty and low-fat. Therefore, they can be safely used by those who follow their figure.

  • Prepare the yeast dough and let it “reach” under the closed lid.
  • For the filling, take chicken breasts or fillets. Cut the meat into small cubes, mix with chopped onions, zira and cinnamon. Remember that the more onions you put, the more juicy the finished dish will turn out.
  • Divide the dough into small pieces, each roll out and fill with the filling.
  • Connect the edges of the blanks, giving the pies the desired shape.
  • Put samsa on a baking sheet and do not forget to grease its upper part with a beaten egg. After that, immediately sprinkle the pies with black and white sesame seeds. If desired, you can also use poppy.

Uzbek samsa is cooked in a preheated oven and served hot. As a complement to the dish, you can use homemade sauce.
