Bagels can rightfully be considered an invention of Belarusians. After all, it was here, in the small town of Smorgon, Grodno region, one and a half centuries ago, these little rings of dough were first baked. The bagel recipe has reached our days and has not changed much.
Dish history
Initially, bagels and drying were considered as a kind of canned bakery. With such a reserve, people in those years were not afraid to survive the winter or to feel shortages of flour. Prudently prepared for the future fragrant rings came to the aid in difficult times. The bagel recipe caused the name of the product itself. The peculiarity of the preparation is that the dough must first be scalded before it gets into the oven. From here comes the name “dumplings” or later - “bagels”. The bagel recipe is very simple:
- Make a thick, but not very cool ordinary yeast dough.
- The resulting mass is thoroughly kneaded and rolled into a thin tourniquet.
- Divide the workpiece into strips of the same length, and then roll each of them into a ring.
- Lay out the resulting figures on a towel and put in a warm place so that the dough can rise a little.
- Boil water in a large saucepan and slightly salt it.
- Throw some ringlets into boiling water and let them boil a little. Thus process all the workpieces.
- Remove the semi-finished products from the water and lay them on a wooden board.
- Send the blanks into the heated oven and wait until they are a little browned.
After this, the finished bagels need to be slightly cooled, and then boldly serve on the table for tea.
Alternative way
The bagel recipe can be simplified by eliminating yeast from it . This will significantly reduce the time to prepare the dough. For this option, you will need the following set of ingredients: 2 eggs (plus 1 for lubrication), a can of regular condensed milk, 3 ½ cup wheat flour, ½ teaspoon of baking soda, a pinch of salt, a little oil (for lubrication).
The cooking process is similar to the previous one:
- From eggs, salt, soda and condensed milk, prepare a homogeneous mixture.
- Add flour and knead soft dough. It should not stick to hands.
- Then divide the dough into pieces, each of which is twisted into a tourniquet, and then gently roll up a ring.
- Cover the baking sheet with food paper lightly poured with oil. Put the blanks on it and spread them with a beaten egg.
- Put the semi-finished products in the oven for 15 minutes at a temperature of 175 degrees.
Before baking, the product can be sprinkled with poppy seeds, sesame seeds, caraway seeds or sugar. Whoever you like.
Good option
People are used to buying everything in the store, but nobody has canceled home baking. Enterprises often use substitutes for different products. Only at home can you be sure that all components are fresh and natural. Butter bagels are very tasty. The recipe in this case contains very few ingredients: ½ kilogram of flour, 700 milliliters of milk, 2 raw eggs, ½ pack (100 grams) of margarine or butter, 200 grams of granulated sugar and a little vanilla.
The dish is being prepared in stages:
- Knead a sufficiently strong dough from prepared foods. It must be remembered that margarine must be softened in advance, and milk should not be added to the mixture immediately, but in parts.
- Roll out the dough into bundles and twist in the form of rings. If desired, they can be slightly flattened so that the shape of the product is original.
- Put blanks on a baking sheet. Gently coat each ring with an egg.
- Place the baking sheet in the oven and wait 30 minutes.
The process is over. After that, you can turn off the bakery cabinet and put the finished bagels on the dish. The recipe is quite simple, and it will not be difficult for housewives to repeat it at home.
Stuffed dish
Bagels are used not only as an addition to tea. They also make an excellent base for meat snacks. At home, you can easily cook bagels with minced meat. The recipe for this dish is quite simple. And the cooking process takes very little time. To work, you need to take products in the following quantities: 1 kilogram of bagels, the same amount of fresh meat, 3 raw eggs, 0.5 liters of milk, 500 grams of onions, salt and, of course, pepper.
When all the ingredients are on the table, you can start cooking:
- Pour milk into a deep clean bowl and soak the bagels in it.
- Grind the meat with onions in a blender, add the remaining ingredients and knead the minced meat.
- Lay the meat mixture in the middle of each bagel.
- Place the billets on a baking sheet and put it in the oven, preheated to 200 degrees.
- After 30 minutes, get the finished dish and put it on a plate.
Delicate bagels stuffed with a delicious mix can serve as a full breakfast or whip up dinner. And minced meat can be not only meat.
Original composition
Cheese bagels can be made even easier. A recipe with a photo in this case will prevent mistakes. For this option, you need to prepare in advance: 80 grams of cream cheese, 60 grams of sugar, 1 egg, 110 grams of flour, 5 grams of salt and baking soda, 70 grams of vegetable oil, 50 grams of powdered sugar.
Each step of the process can be compared with a photograph:
- Grind the processed cheese gently on a coarse grater.
- Beat the egg with salt and sugar.
- Add baking soda (slaked with vinegar) and cheese to the resulting mass. Mix everything thoroughly.
- Gradually introduce flour and knead a fairly dense dough.
- Roll out the dough into a layer and cut rings with two glasses of different diameters.
- Fry the workpieces alternately in oil in a pan. This must be done quickly so that the product does not dry out.
- Put the hot bagels on a napkin to remove excess fat, and then lightly sprinkle them with powder (or some seeds).
A creamy additive will add a delicate donut special taste and unique aroma.
