The main ingredients then were honey and the famous Antonovka - a variety that was not widely spread in Europe. Instead of honey, sugar began to be put much later, already in the 19th century. And egg white, as the third component, is also a primordially Russian invention! But the French innovation - marshmallows - is a kind of descendant of this same marshmallow "rashen".

How is the simplest pastille prepared at home? The recipe (from apples as the main ingredient) of its preparation is as follows: wash the number of fruits that you have, cut into quarters, remove the cuttings and seeds. The more sugar content you take, the naturally sweeter the dessert will be. Well, a pleasant sourness, of course, must also be present! Fold the blank into a thick-walled cast iron, add a little water to the bottom. Boil for 15 minutes over low heat, covering the container with a lid. Soften the finished product thoroughly with a pusher to a puree-like consistency. Since a lot of juice is released at the same time, put the cast iron on the fire again so that its contents are somewhat evaporated. For best results, do not cover. Ready thick mashed potatoes should be laid out on baking paper and dried in the oven (the door should be open) until golden brown.

If you have a thick pastille, the recipe - it is made from apples, or from other fruits - recommends waiting for the plate to cool completely. Then you need to turn it over to the other side, again send it to the oven for "dry". When the dessert has reached the desired condition, it can be cut into strips, wrapped in cellophane or put in jars and kept in the refrigerator. What is remarkable just such a pastille? Still very tasty is apple pastille, the recipe of which contains sugar and egg white. For 1 kg of fruit, 300-350 g of sugar, 5-6 g of citric acid (ascorbic), 2 protein (fresh) are required. Bake the fruit in the oven. To use apples more economically, you first cut them into halves and remove the core.

Remove the finished fruits, mashed through a sieve or grind in a blender. Add sugar and acid. Stir, place on a baking sheet and wait until the mashed potatoes are boiled. After that, the apples need to cool. Separate the whites from the yolks and beat them. Pour the proteins into a chilled puree in a thin stream, whisking them at the same time. This method of preparation resembles a recipe for Kolomna pastila from apples. The clarified air mass should be laid out again on a baking sheet, which has only already been covered with paper, and put in the oven - to dry the top layer. And in the middle, it can freeze already at room temperature (about a day). Finally, cut the candies into cubes, roll in icing sugar. You can save them in a cool place, in cardboard or plastic packaging.
