Classic cupcakes without oil (with filling)
This is perhaps the simplest recipe for such a confectionery. To prepare them, you need half a glass of sifted flour mixed with 5 grams of baking powder for the dough. In a separate bowl, you need to beat 3 eggs to a state of foam (the duration of the process is about 10 minutes) and add flour to the egg foam. Of all this, the dough is kneaded. An orange chopped in a blender is added here (before this, it must be boiled in boiling water for 5 minutes) and a few cranberry berries. Now the dough must be very well kneaded already with all its ingredients. Inside is placed any filling of your choice (condensed milk, jam, jam, berries, fruits).

In order for such a work of confectionery art to be born, you need to mix in one bowl 100 ml of yogurt, the same amount of sugar and a couple of eggs, a pinch of vanillin is added here. In another bowl, 100 g of instant oatmeal, one and a half glasses of flour, a pinch of salt, a nutmeg on the tip of a tablespoon and one and a half teaspoon of baking powder are combined.
Separately, you need to cook the berries - they must be rolled in flour. Alternatively, you can use blueberries (it can be replaced with any seasonal fruits).

Orange muffin

Now you can start kneading the dough. First you need to separate three eggs - to separate the yolks from the proteins. After that, the yolks are ground with an incomplete glass of sugar and mixed with an orange, half a glass of flour, a teaspoon of baking powder and a pinch of vanillin, and the whites are whipped into the thickest foam and only then combine with the orange mixture. The combined ingredients must be stirred until a homogeneous mass is formed, and then add the swollen raisins to it.
The finished dough is poured into a mold and sent to bake in the oven for 40 minutes (optimal temperature is 180 degrees). When the cake is ready, it needs to be cooled and, if desired, you can sprinkle with powdered sugar.
