Thai cuisine: Tom Yam, recipe for cooking

Tom Yam, the recipe of which will be discussed in this article, is a soup native to Thailand, which has gained popularity almost all over the world. This dish has a sharp sour taste due to the presence of hot chili paste in it. It consists of chili peppers, garlic, shallots, fish sauce, soybean oil, galangal, cane sugar, shrimp paste and lemongrass. Thanks to these ingredients, Tom Yam has an incomparable aroma and taste.

Let us consider in more detail each of the components of this wonderful dish, namely, what properties it gives to the finished dish. So, lemon grass and leaves of California lime give the soup the basic notes, endowing it with a lemon scent, galangal root replaces ginger and has a woody taste. Fish sauce, having a specific smell, is responsible for the presence of the right amount of salt in the dish, coconut milk makes the soup soft, relieving spiciness, lemon gives sourness, and granulated sugar - some sweetness. Cilantro gives the dish a spicy aroma, tomatoes - a sweet-sour taste, and mushrooms, chicken and seafood make it more satisfying.

Thus, the volume of yam, the recipe of which is proposed below, involves the use of the following ingredients: juice of one lemon, twelve shrimp, one spoon of chopped galangal, two pods of lemongrass, as well as one bunch of cilantro, one tomato, one onion, one hundred grams of mushrooms or oyster mushroom, five chili peppers, two tablespoons of fish sauce, one spoon of chili paste, two cups of chicken stock, salt.

Shrimp must be cleaned and their black intestine removed. Lemograss is cut into small pieces, while the white part is crushed with a knife. Onions are cut into four parts, galangal - into thin circles. The mushrooms are removed legs, and then cut into several parts. The tomato is cut into eight slices, juice is squeezed out of lime, and veins are removed from its leaves. Coarsely chop the cilantro, crush the peppers with a knife and cut into small pieces.

To start cooking Thai soup , Tom Yam begins with laying lime leaves, lemograss, onion and galangal in a boiling broth and boiling for five minutes under a closed lid, after which they remove the onion. You can also remove all herbs, although in Thai restaurants this dish is served with them.

Then, for one minute, the mushrooms are put in the broth, since they tend to boil quickly, after which they are taken out into pre-heated dishes. Chili paste and fish sauce are added to the soup.

Shrimps are lowered into boiling water for several minutes, then they are transferred to dishes with mushrooms. During the preparation of such a dish as the pit, the recipe of which we are considering, you should carefully monitor that the seafood is not digested, but remains fragrant and juicy.

Meanwhile, the broth is removed from the heat and lemon juice, peppers and salt are added to it.

Mushrooms with shrimps are laid out on serving plates, tomatoes and chili peppers are added and the fragrant broth is poured.

It should be noted that this dish is not intended for daily cooking (outside of Thailand), since it is quite difficult to find all the ingredients necessary for it. But having prepared that pit, the recipe of which we know, for a special occasion, you can give your loved ones and guests an unforgettable experience. It is only necessary to remember that this soup must be prepared immediately before serving (the process itself takes about fifteen minutes) so that it does not lose its peculiar taste and aroma. To ensure that the dish is not very sharp, add only one chili pepper and one hundred grams of coconut milk to it, and the last component can be poured directly into a serving plate before serving. Adhering to these recommendations, you can get a great dish with a unique taste.
