Pepper is a Hungarian dish. Naturally, getting into other countries, the recipe changes a little. Each hostess adds its own twist or new ingredient. But the main component of this dish is invariably sweet pepper. It is he who, in combination with other products, makes lecho of pepper unusually tasty.
To prepare this traditional dish, you need to take the following ingredients. It will take three kilograms of good tomatoes, the same amount of
bell pepper, 4 tablespoons of salt, one and a half glasses of sugar, 200 milliliters of vegetable oil, a couple of bay leaves and peppercorns.
First you need to prepare the vegetables. We wash the tomatoes with water, cut into large pieces and turn into a tomato. To do this, you can use a blender or a meat grinder. We clear the pepper from the seeds with the peduncle and cut it into long pieces (lengthwise) into 4 or more parts, depending on the size of the vegetable.
Pour the cooked tomato into the pan. Add salt, oil and sugar to it. We put the pan on the fire and wait until it boils. Then put chopped pepper in boiling tomato. Cook until tender. Typically, with such a volume, the cooking time is about 30 minutes. The main thing is not to digest the pepper, otherwise it will become soft and will fall apart into pieces. In this case, the lecho of pepper will have an unaesthetic appearance. At the end, add vinegar - 60-80 milliliters (adjust to taste). All mix well. Our dish is ready. In this way, you can cook lecho of
pepper for the winter. In this case, pour it into prepared jars and close the lids. Banks and lids should be pasteurized. When the workpieces have cooled, they must be placed in a room with a lower temperature.
Lecho is usually made from peppers and tomatoes, but other vegetables can also be added. Take three kilograms of peppers, a glass of vegetable oil, one liter of tomato paste (you can make a tomato from fresh tomatoes), 250 grams of granulated sugar, a glass of vinegar (6%) and a tablespoon of salt. You will also need one kilogram of carrots.
Peel the carrots and three with a fine grater. We remove the seeds and the stalk from the pepper, cut it into strips. We put a pan on the fire. Pour tomato paste, oil and vinegar into it. Add salt and sugar there. When the mixture boils, put pepper and carrots in it. Cook for 8 minutes. Then lay out the pepper and carrot lecho in jars.
And finally, the recipe for lecho with the addition of eggplant. We take 4 kilograms of tomatoes, two medium eggplant, 7 large peppers, two onion heads, 200 milliliters of vegetable oil, salt, tarragon and sugar.
Vegetables need to be washed and peeled. Cut the tomatoes into slices, and pepper, onion and eggplant into rings. Fry the eggplants in a pan with vegetable oil until they become soft. Put the remaining vegetables in a pan and cook for 15 minutes. Then add spices and continue cooking for another 20 minutes. After that, put the eggplant in the pan. Cook for another 15 minutes. Then we lay out the lecho in pasteurized jars and roll up the lids.
