Cookies "Amaretti" - a delicate crispy dessert. It is baked from almond and corn flour. The composition may also include a small amount of wheat flour. It all depends on the recipe that the sweet tooth culinary chooses. Of course, in addition to flour, there are several more ingredients. These components give the Italian liver the tenderness and seduction that not everyone can resist.

Essential Products
Remember to make sure you have the right ingredients for Amaretti cookies. If you donโt have something, buy it. And only after that start cooking. You will need:
- sugar - 300 grams;
- sweet almonds - 150 grams;
- bitter almonds - 50 grams (by the way, for reference: bitter almonds are the center of peeled apricot kernels);
- two raw egg whites.
The technological process of making dough for sweets
Dry the almonds. Use your oven for this purpose. You can dry the nuts with a microwave. Make it your way. Use a coffee grinder to chop dry almonds, turning them into flour for Amaretti macaroons. If possible, take not all nuts for flour. Leave some to decorate the sweet cookies.
Separate the whites of two raw eggs very carefully from the yolks. Add some sugar there and start whipping. In the process of turning protein into foam, add sugar in small parts and continue to whisk. When all the sugar is in the egg foam, and the foam itself becomes strong, white and stable, pour all the resulting almond crumbs into it. Then gently but carefully distribute the almond dust over the dough. Use a silicone spatula for this.

To prepare this baking recipe you will need:
- one large spoon (tablespoon) - wheat flour;
- the same amount of cornmeal;
- 95 grams of ground almonds or almond flour;
- a small spoon of ground cinnamon;
- 160 grams of powdered sugar - for whipping;
- powdered sugar in order to decorate the finished products, as you see fit;
- fresh egg whites - 2 pieces.
We proceed to the preparation of the second variant of Amaretti cookies.
In a bowl you need to pour previously sifted flour - corn and wheat. Add to them all the cinnamon and half the norm of powdered sugar. Pour almond flour here as well. Now you need to start whipping the proteins with powder. This should be done gradually. Beating is done first at a low mixer speed. As proteins turn into foam, speed needs to be increased. Add the powdered sugar to the whipping proteins, which remains from the total mass prepared for making the dough. We do not introduce the powder all at once, but gradually - so it all dissolves and gives the egg foam stability and strength. When the foam gains stability and stops blurring, carefully interfere with the dry part of the future dough and cinnamon.
Spread on a baking sheet
We take two small spoons and, dipping them in cold clean water, pick up the resulting dough and transfer to a baking sheet covered with baking paper. Do not forget about the need to maintain the distance between the products (1.5-2 centimeters). Baking, cookies will rise and slightly increase their volumes.
However, it is too early to send it to the oven, since the blanks placed on the baking sheet for one hour must be left to dry. At the same time, it is not worth covering them. After the specified time, we heat the oven to the required 180 degrees. Before sending the baking tray with cookies to the oven, the workpieces should be generously sprinkled with powdered sugar.
And now you can put them inside for 15-20 minutes. Baking time depends on your personal preferences. Dryer and rosy cookies will be obtained with a longer stay in the oven. The composition of the cookies:
- 200 grams of almond flour;
- squirrels of four eggs;
- 200 grams of powdered sugar;
- almond shavings, ground almonds or flakes to decorate baking - 30 grams.

We take a deep bowl and, separating the yolks of the chicken eggs from the proteins, we begin to beat the latter with a mixer. Please note that if these two ingredients accidentally mix, then whipping will be significantly delayed and it will be difficult to achieve the desired consistency. Therefore, when separating egg elements from each other, be extremely careful.
Having achieved steady peaks from the mass, you can combine it with almond flour. Mix all the components of the dough. If you have Amaretto liquor in your storage, add ten grams of this drink to the dough. It will give products a brighter aroma and taste. If there is no alcohol, nothing critical will happen. You can continue without liquor.
We fill the confectionery bag with the resulting composition. We cover the baking sheet with special paper and place the protein semi-finished products on it from the bag.
