How to cook beef chops?

I buy meat from one and the same seller in the market, who helps me to choose the best slice for this or that dish. Beef chops will turn out quite soft and juicy, if you use veal for their preparation. You can also choose beef tenderloin.

How to cook beef chops to make them juicy and tender? Fresh meat must be marinated (preferably 3-4 hours, but not less than one hour). I’ll tell you a secret that almost all men are happy to eat chops - they, like hunters in their souls, like the taste and smell of freshly prepared meat.

And now I will describe in more detail the process itself, how to cook beef chops. We need to take the following products: a pound of beef, a couple of eggs, two tablespoons of vegetable oil and three tablespoons of breadcrumbs, black pepper and salt, put to taste.

First, wash the meat and cut a piece of beef across the fibers into 6-8 parts. Then, in turn, we put sliced ​​veal slices on the board and beat off on both sides. After that, we salt each piece of meat, sprinkle with pepper. While our meat is being salted, we set about making batter. To do this, beat a couple of eggs until a homogeneous mass is formed. Before you start to fry the chops, put all the pieces in a bowl with batter for an hour, during which time the meat will become soft and juicy. Pour three spoons of breadcrumbs onto a separate plate.

We put a frying pan on fire, heat it, pour vegetable oil. And proceed to frying the chops. Alternately, dip each piece of meat first in the batter, then let the batter drain, then immediately chop the chop in breadcrumbs.

Fry our chops in a batter under a loosely covered lid. It is enough to fry for 10-15 minutes on each side. As soon as a golden crust has formed, the fire should be slightly reduced. Then we put all the chops in a frying pan, closing the lid, let them steam for about ten minutes.

That's the whole secret of how to cook beef chops tender and soft.

We serve chops with fresh salads, for example, from radishes and cabbage, tomatoes with cucumbers, spinach or salad leaves in all kinds of combinations.

Beef chops can be served with mashed potatoes, buckwheat, or pasta.

Chops are also made from pork, chicken , you can add mushrooms and cheese to them. One of my favorite recipes is chicken chops with mushrooms. I will share it with you. So, you need to take 0.5 kg of chicken breast, 2 eggs, a couple of tablespoons of flour, a teaspoon of mustard, 300 gr. champignons, one onion, 100 gr. hard cheese, a couple of tablespoons of vegetable oil, ketchup, salt and ground black pepper.

We will cook this dish in two stages. We disassemble the chicken breast into layers and beat them, salt, pepper and set aside for a short time. In the meantime, we fry the mushrooms with onions in vegetable oil (we cut the mushrooms into large slices). Fry until the mushrooms are lightly browned. While the mushrooms are fried, we will prepare the batter. Beat eggs, add a spoonful of flour, a pinch of salt and one teaspoon of mustard. By viscosity, the batter should turn out like a dough for pancakes.

When the mushrooms are ready, set them to cool, and we ourselves begin to fry the chops. Dip the pieces of meat in the batter and put it on a preheated pan, and fry for no more than 3 minutes, so that the batter is just seized.

Then put the chops on a baking sheet greased with vegetable oil, and on top of each we place a spoonful of fried champignons, a little ketchup and fill them with grated cheese. The result is chops under a fur coat of mushrooms and cheese. Now we put all this “beauty” in the oven for 15-20 minutes, which we prudently preheated to 180 degrees.

Similarly, you can make beef chops with mushrooms or pork.
