Ingredients: half a liter of water, half a liter of milk, flour (≈ half a kilogram), dry yeast (bag), eggs (4 pcs), ≈ 1/3 packs of butter, two pinch of salt. sugar (40 grams).
Cooking method:
Heat the water to about 38 degrees and dilute the yeast in it. A lot depends on the water temperature. It should not be hot (the yeast will boil) or cold (the fermentation process will take a lot of time).
Sift half the flour into a bowl, add the diluted yeast and sugar, knead until smooth. Cover the dough with a towel, place in a warm place for half an hour, so that it rises.
Heat the milk a little, melt the butter, beat the egg yolks (the most delicious pancakes will be obtained if the proteins are added immediately before frying) and salt. Beat the resulting mixture with a whisk and gradually, stirring occasionally, add with the remaining flour to the risen dough. Cover the bowl again with a towel and remove to heat for another hour. As a result, the dough rises a little and foams. It must be mixed and kept in a warm place for another ≈ 10 minutes.
Add whipped whites, mix everything and start frying pancakes. Grease a frying pan with vegetable oil and pour dough onto it with a ladle. When the edges of the pancake become golden, and the surface - holey, it needs to be turned over. Serve with sour cream, cottage cheese, jam, etc.
Fresh pancakes
Ingredients: flour (1/4 kg), sugar (50 g), two pinches of salt, 1/3 packs of butter, milk (a little over half a liter), vegetable oil, 5 eggs.
Cooking method:
To make delicious pancakes, beat the eggs and add them to the bowl with flour, sugar and salt. Heat the milk (one and a half glasses), in which melt the butter. Pour into a bowl. Beat all the ingredients with a mixer, pour the same amount of milk, stir. Strain the dough and let stand for about 2 hours. Grease a preheated pan with vegetable oil and bake until the pancake becomes ruddy, then turn over. Serve pancakes, greased them with butter.
Delicious pancakes with soda
Ingredients: milk (≈ 700 ml), sugar (a few tablespoons), flour (2 cups), 3 eggs, vegetable oil (40 g), salt (3 pinch), quenched soda.
Cooking method:
Beat eggs in a bowl, add sugar and beat with a fork. Heat the milk and pouring it into a bowl, continue to whisk. Add slaked soda, vegetable oil, salt and flour gradually. Pour in the remaining warm milk. It is necessary to mix so that there are no lumps left. Heat the pan and grease the oil before frying the first pancake. There is no need to grease the pan later. Cover a plate with prepared pancakes with a towel so that they do not dry out.
Delicious pancakes in milk
Ingredients: dough - 2 cups of milk, 2 eggs, a little sugar, ≈ 80 g of vegetable oil, two pinches of salt, flour ≈ 3 cups; filling - cheese or honey.
Cooking method:
Put sugar, flour, salt in a container. Beat eggs, add vegetable oil and milk. Using a mixer, mix all the ingredients until smooth. Add boiling water and mix again with a mixer. Grease a frying pan with oil and pour the dough onto it with a ladle. We turn the pan in the right directions so that the dough spreads evenly.
Delicious pancakes are obtained if cheese is used as a filling. Rub it on a grater and spread in the center of the pancake, which should be rolled up with an envelope; put them all in a pan and simmer over low heat.
