Plum tkemali for winter - famous Caucasian sauce

We know a lot about Caucasian cuisine . How many dishes have become beloved all over the world: satsivi, khachapuri, kharcho, adjika and others. It has an unusual taste: sweet, slightly spicy, with a delicious aroma. It is not difficult to cook, but some spices are required.

This recipe uses red plums. We take a kilogram of fruit, 250 milliliters of water, two tablespoons of dry dill, a head of garlic, three small tablespoons of coriander, 1.5 tablespoons of red pepper (ground) and two tablespoons of dried mint. Now we begin to prepare tkemali sauce from plums for the winter. Plums are cut in half and put in a pan. Pour water into it and put on a slow fire. They should boil until the skin and bones are easily separated. Next, pour the liquid into a separate bowl, and make the mashed potatoes from the plums. It must be boiled until the mashed potatoes become thick sour cream. In the process we add the drained liquid. After that we add plum tkemali to the sauce (many housewives harvest it for the winter) all spices, ground in a mortar, and salt. Cook for about 5 minutes. We pour hot sauce into bottles or jars of small volume. Top with vegetable oil to form a film. Jars with sauce are rolled up and stored in a cold place.

Green sauce

Depending on the variety and color of plums, sauce of different shades is obtained. The taste is also slightly different, so choose the fruit of the desired degree of maturity. Now make tkemali sauce from green plums. Take two kilograms of fruit, a large bunch of cilantro, two heads of garlic, a little sugar (to taste), salt and green pepper adjika. Plums are put in a pan and pour them with water. We put on medium heat and cook until soft. Then turn off the heat and let the plums cool, without pouring the broth. After this, drain the liquid into a separate container. We wipe the plums through a sieve, removing the peel and seeds.

Peel and chop the garlic, finely chop the greens and crush in a mortar with garlic. Add this mass, as well as salt to the plum sauce. If the sharpness is not enough, then add adjika. Pour salt and sugar to taste. Tkemali sauce from plums for the winter is ready. Pour it into suitable containers and close it.

Yellow sauce

This sauce is made from yellow plums (cherry plum). For this you need a kilogram of fruit. 50 grams of sugar, a head of garlic, 20 grams of salt, a pod of hot pepper, 50 grams of cilantro and dill and half a spoonful of coriander. Yellow plum tkemali sauce is prepared according to the following recipe. We take the plums and pass them through the meat grinder, removing the seeds. Add sugar and salt to this mixture. Cook the sauce for 5 minutes. After that, add finely chopped garlic, herbs, peppers and spices. When the sauce boils, remove it from the heat. If we harvest tkemali from plums for the winter, then we put it hot in cans or bottles. The sauce is eaten cold as a seasoning for meat, chicken and other dishes.
