  • Form small cutlets, roll them in flour and fry in a pan with a closed lid on both sides.

How to cook Greek greens with tomato paste

  • Dilute two tablespoons of 25% pasta in a glass of warm water.
  • Grind and fry onions and garlic in a pan, add diluted tomato to them and bring the sauce to a boil.
  • After 15 minutes, when the liquid is respected, and the foam disappears, put salt, sugar, vinegar and your favorite spices in the pan. Warm up the mass for a few more minutes.
  • Put the fried buckwheat in a deep bowl, fill them with sauce and simmer until cooked.

If you have time, then you can make a sauce of fresh tomatoes: they should be peeled, cut into pieces and mixed in a blender with salt, pepper, garlic and leaves of fresh basil.

This dish is prepared in much the same way as traditional β€œhedgehogs”, but instead of rice we will use buckwheat. Please note that in this case we will use raw minced meat and uncooked cereal so that the patties are more juicy and healthy. Grechaniki (recipe with minced meat) is prepared as follows:

  • Peel the pieces of beef and pork and cut off the visible fat. Grind meat with a meat grinder.
  • To the minced meat (400 grams) add chopped green onions (one bunch), one egg, half a glass of washed cereal, salt and pepper. Mix all the ingredients thoroughly, form the patties and fry them in a deep pan with the addition of vegetable oil.
  • To make the sauce, mix sour cream (one bag) with curry powder (half a teaspoon), flour and salt. Dilute the mixture with a glass of warm water and mix again.
  • Pour the ready-made buckwheat with sour cream sauce and bring to a boil. After this, the heating should be reduced, cover the dishes and simmer until cooked.

Grechaniki (recipe with minced meat) is a rather satisfying dish, so you should not prepare a separate side dish for it. It is best served on a table with a salad of fresh vegetables.

To prepare these cutlets, you can use chicken, beef or pork liver. And for a side dish we recommend cutting fresh vegetables or serving canned home-made salad. Making Greek with liver is quite simple:

  • Cook the cereal (half a glass), mix it with liver minced meat, mashed onions, flour, one egg, salt and pepper.
  • Preheat the pan and fry the patties on it from both sides. If the minced meat turned out to be liquid, you can put it in a pan with a spoon, like liver pancakes.

Fresh forest mushrooms are able to give any dish a special aroma and original taste. But if you don’t have them at your disposal, you can use dried mushrooms or buy champignons at the nearest supermarket. How to cook Greek:

  • Cook the cereal (one glass) until almost complete and drain the excess water.
  • Fry chopped mushrooms (500 grams) with onions, and then chop them with a blender.
  • Separately, fry minced meat (300 grams) until half ready.
  • Mix all the products together, add one egg, fresh herbs, salt and pepper.
  • Form cutlets with your hands and roll them in flour. They can be given any shape - oval, round or oblong.
  • Fry the grechaniki on both sides and serve hot.

Greek women with meat (recipes are presented in the article) go well with any fresh vegetables. For example, chopped tomatoes, mashed zucchini or eggplant can be added to minced meat.   • Dice onion, carrots, bell pepper and eggplant. Put the vegetables in a skillet and fry in a small amount of oil.
  • When they are almost ready, add some soy sauce, chopped tomatoes and garlic to them. Warm the vegetables on the fire for a few more minutes.
  • Put in the dishes with a thick bottom the first layer of ready-made cutlets, on top - part of the vegetables, then the operation should be repeated several times.
  • Simmer for ten or fifteen minutes.
