Chopped meatballs are a popular dish, but sometimes the most delicious food bothers. To diversify your diet, try instead of ordinary meatballs to cook meat minced meat with an egg from minced meat.
Zrazy is a dish typical of Polish, Belarusian and Ukrainian cuisine. In fact, zraza is a patty stuffed inside. Consequently, the taste of a meat zraza dish with an egg mainly depends on the quality of minced meat. You can, of course, use the minced meat bought at the store, but it is better to make this semi-finished product at home, knowing exactly what meat quality went into its preparation.
Everyone knows that minced meat products are tender and tasty when different types are used in the preparation of minced meat. Most often, when preparing zraz and cutlets, pork and beef are taken in equal parts. But this is only one option. You can add poultry meat to the minced meat or use lamb for its preparation.
In addition, white bread is added to the minced meat. This is not done to reduce meat consumption, but to give juiciness to finished products. For half a kilogram of meat, you should take 80 grams of white bread, this is about two or three slices of loaf. Bread should be freed from the crust and soaked in milk (can be in water). Then squeeze the bread from excess fluid and add to the twisted meat. As a rule, onions and garlic are also added to minced meat. For a pound of meat, it is enough to take one medium onion and a couple of cloves of garlic. Vegetables can be scrolled with meat through a meat grinder, or you can just finely chop or chop in a blender. It remains to salt and pepper the minced meat, you can add your favorite spices.
In order for meat zrazy with an egg to be more tender, the mince should be beaten first. This operation consists in the fact that the lump of minced meat needs to be lifted above the table and thrown into the bowl with force. Repeat this operation 10-12 times. Then you should put the prepared stuffing for cooking zrazy in a sealed container (or cover the bowl with the stuffing with cling film) and put it in the refrigerator for at least 30 minutes.
While the minced meat is โstandingโ, it is worth doing the filling. To do this, boil 4-5 eggs, cool them in cold water, peel and cut into small cubes, as for the preparation of Olivier salad. For juiciness, it is worth adding butter (melted) or a little mayonnaise to the filling. Stuffing should be salt and pepper.
So, how to cook zrazy with an egg, when we already have prepared minced meat and filling? Divide the minced meat into portions, as for the preparation of cutlets. Then we take a portion of forcemeat, put on a palm and form a flat cake from it. Now in the center of this tortilla we put a spoon of the filling and begin to squeeze the palm, connecting the edges of the tortilla from the forcemeat. Thus, we form a semblance of a pie in which minced meat plays the role of dough.
Ready zrazy breading in breadcrumbs, flour or semolina. Meat zrazy with an egg can be fried in a pan on both sides, or baked in the oven. The second option is preferable, since the zrazy will turn out to be less greasy, and you donโt have to stand by the stove, turning the zrazy over. You can bake zraza in the oven just by putting it on a slightly greased baking sheet, or in a sauce. Milk, sour cream or tomato is well suited for this purpose.
Of course, the classic recipe โmeat zrazy with an eggโ can always be modified. For example, you can add finely chopped and fried onions or green onions to the egg filling. An interesting option can be obtained if you use a mixture of chopped steep eggs and grated cheese as a filling. You can also add boiled and finely chopped mushrooms to the filling. Perfectly complement the filling and fresh herbs. For a change, instead of filling with steep eggs, you can cook an omelette for a couple or in the microwave, cut it into small cubes and use it to make zrash.
Serve such zrazy with almost any garnish - vegetable salad, porridge, boiled or fried potatoes, pasta.
