Ingredients:

  • oil (195 g);
  • flour (240 g);
  • yolks (two pcs.);

  • icing sugar (95 g);

For cooking, we need a mixer. With it, beat the powdered sugar with butter. Then add the yolks, salt and flour to the mass. You can also add some poppy seeds. Beat the resulting mass until a soft and uniform consistency is obtained. Next, wrap the dough in film and send it to the refrigerator. Twenty minutes later, we take it out and roll it out, after which we put it in a mold. Bake the cake for about thirty minutes. In the meantime, we’ll wash ourselves and sort out the currant berries. Next, take 1.5 cups of water and add ½ cup sugar and a few handfuls of currant berries. Bring the mass to a boil, and then filter. The resulting currant syrup is useful to us for further preparation.

Next, soak the gelatin plates according to the instructions on the package. Then squeeze them and transfer to syrup. Gelatin must be completely dissolved.

Using a mixer, whip the cream, mascarpone and currant syrup. The resulting mass is carefully laid out on the prepared dough. We send the cake to the refrigerator overnight. Knead the dough from flour, sugar, cold water and salt. It must be thoroughly kneaded by hands, then rolled into a ball and wrapped in cling film. Cover the mass with a towel from above and leave to infuse at room temperature for forty minutes. After the specified time, we crush the dough again and divide it into three parts. We roll each of them into a layer 1-2 cm thick.

We carefully wash the berries and remove unnecessary twigs and garbage. Next, fill the currant with sugar and leave it for forty minutes. During this time, the berries have time to let the juice. After we transfer the currants into a colander so that excess moisture is gone. The berries are mixed with starch.

From the prepared dough we cut out the same size circles using any shape (you can even use a glass). We spread some berries in each piece, add sugar and fasten the edges of the dough. When all the dumplings are ready, put a pot of water on the fire. Bring the liquid to a boil, after which we lower all the dumplings into it one at a time. After they float to the surface, boil them for another couple of minutes.

Redcurrant jelly is one of the most delicious desserts that can be prepared from this wonderful berry.

Ingredients:

  • kilogram of currant;
  • water (100 ml);
  • sugar (1.5 kg).

Rinse currants well and remove extraneous debris. We remove the branches and wipe the berries through a sieve. Dilute the juice with water and bring the mass to a boil. Add sugar, mix thoroughly and boil until thickened. The degree of density is determined at our discretion. Next, remove the mass from the fire and filter through a fine sieve to get a clear jelly.
