Add beans to it and cook for about 2 hours. After that, crush part of it in a blender. Combine the remaining beans in a saucepan with zucchini and carrots. Add tomato paste (a couple of spoons), as well as pasta or rice. Chop the cabbage finely and add there. Boil the soup for 30 minutes over low heat. Add salt and pepper to taste. After half an hour you will receive a delicious and fragrant minestrone. The recipe involves the use of cheese. If you are not a vegetarian, you can sprinkle hot soup with grated Parmesan. For meat minestrone, take beef tenderloin, canned beans, pasta, potatoes, zucchini, tomatoes, sweet peppers, carrots, onions, garlic, seasonings, cheese.
