The imagination of coffee lovers to create new drinks does not know how to keep. Food lovers endlessly experiment with espresso, milk and other ingredients to produce a variety of cocktails. One of the last results of such experiments was raff coffee. The orange variation of this new cocktail will be discussed in this article.
It should also be mentioned that there are other types of raff coffee: classic (vanilla), honey, cinnamon and even sage and lavender. But many gourmets believe that such a soft combination that gives orange juice, espresso and cream, you will not find in any other cocktail. Rough can be prepared at home, although with a professional coffee machine pitcher, making a drink will be much easier and faster. But a French press and a cezve are also suitable.
Interesting history of raff coffee
This drink appeared recently, at the very end of the 1990s. In Moscow Coffee Bean coffee shop near the Kuznetskiy Most metro station there was a patron named Rafael. He asked the barista to make a drink with a mild flavor, vanilla aroma and moderate sweetness. To please the regular visitor, the staff tried as best they could. And as a result of long experiments with espresso, cream and vanilla sugar, a drink with a wonderful steady cap appeared. Gradually, other visitors began to order "coffee for Raphael." So the drink found its name. Soon, to reduce it, they began to call it simply "raff."
This coffee cocktail has gained popularity in the countries of the former Soviet Union. Barista taught his colleagues from other coffee houses to cook raff. So the drink became popular in Belarus, Ukraine, Moldova and Kazakhstan. In Western Europe, there is (and has long been) its own rough coffee (pronounced "raff"). But this black drink is brewed from coarse coffee for those gourmets who like intense bitterness and a large fortress. Russian cocktail is gentle and sweet. There is no hint of bitterness in him. The classic cocktail soon began to be made with many variations. One of them is orange raff. But gourmets diversified its basic recipe with numerous versions. So, the citrus component can be obtained:
- from the zest
- from juice
- from syrup
- from liquor.
How to cook classic raff
Espresso, cream, vanilla sugar ... Somewhere we already heard this list of ingredients. Surely! This is a set of products for cappuccino! What is the difference between these two coffee drinks? Only the way of cooking. In a cappuccino, espresso is prepared separately and poured into a cup. Milk or cream is whipped and added at the very end, forming a hat. And in a classic rafa, all the ingredients are mixed in the pitcher of a coffee machine or (at home) in a mixer and whipped together.
This method of preparation allows the ingredients of the cocktail to “get married”, to enter into a strong connection. The recipe for orange raff differs from the classic one only in the addition of a citrus component. But it is also mixed with other ingredients at the very beginning of the preparation of the drink. Our main task is to prevent the cream from fermenting due to contact with citrus juice. How to do it? Read on.
Ingredients for a drink
One standard serving of orange raff (180 milliliters) requires one shot of espresso. As in the case of cappuccino, milk will need twice as much as coffee. Based on the fact that the shot is 50 ml, we take the cream in half a glass. The last product should not be too greasy. Eleven percent will be just right. If the cream is more greasy, it is recommended to dilute them a little with boiled water. We also need two types of sugar: regular and vanilla, both 5 grams each (a small spoon).
Some recipes suggest taking orange instead of regular sugar. Make it very easy. It is enough to drip orange syrup into the granulated sugar. And finally, we need the juice of this citrus. A tastier drink will come from freshly squeezed orange. But juice from the pack is also suitable. To decorate the cocktail, you can use cinnamon (1 gram). Seasoning will make a cap delicious and give the taste of the drink piquancy and astringency. You can decorate the edge of the cup with a circle of citrus.
Orange raf coffee: a recipe for a car
First brew an espresso. Already at this stage we need to decide how we will serve a coffee cocktail. Rough, since it is considered a subspecies of cappuccino, is poured into medium-sized porcelain cups. But there is another way of serving - in high glass goblets with a small handle, as for a latte. In this case, you need to double the portion of espresso from one shot to two.
- Pour cream, coffee and orange juice into the pitcher.
- Add two types of sugar.
- Beat the cappuccino until a thick, dense foam is formed.
- Warm up a cup or glass goblet. Pour the finished orange raff. As you can see, a small amount of citrus juice did not ferment not very greasy cream. The mass was homogeneous.
- Decorate a coffee cocktail with an orange slice.
- Sprinkle the surface of the foam with cinnamon or grated zest.
- When serving in a glass, a spoon with a long handle is required. With it you can collect delicious foam that has settled on the walls.
Orange raf coffee: a recipe at home
What if you don’t have a professional cappuccino machine on hand? This is not a reason to refuse a tasty drink. You can cook raff at home. To do this, you will need:
- Turk or French press,
- saucepan
- mixer or simple whisk.
First of all, we brew coffee. For such purposes, it is better to take good arabica of elite varieties. The quality of the coffee brewed in cezve is very much affected. What flows from our taps gives the drink a metallic and not very pleasant accent. Everyone knows how to make coffee in a French press. But making a drink in a Turk is a whole art.
- So, we put 4 teaspoons of ground coffee in a cezve.
- Pour 150 ml of cold water.
- Immediately put the required amount of regular sugar.
- We put the Turk on fire.
- As soon as the foam rises, raise the cezve above the ring. Once the foam has settled down, we immediately return the Turk to the fire. So repeat three times.
- Ready coffee must be filtered.
- Heat the cream in a saucepan to 70 degrees. This can be done in the microwave.
- Mix cream, coffee, vanilla sugar. Beat with a mixer with a whisk until foam is formed.
Orange Chocolate Rough
This cocktail needs the same ingredients as in the previous recipe. The amount of chocolate can be varied to your liking. The tiles need to be rubbed into crumbs. There are two ways to make orange rafa with chocolate. First, classic: mix all the ingredients in a pitcher (or saucepan) and beat.
The second method is more original. Put a circle of orange on the bottom of the cup. Sprinkle with grated chocolate. Pour hot coffee. Spread a cap of whipped cream on top. Sprinkle with cinnamon and grated orange zest.
Rough with liquor
This drink will be especially good on a winter evening in the company of friends. The ingredients we give for 4 servings.
- We brew coffee - half a liter.
- We filter it.
- Mix coffee with 150 ml of orange liquor.
- Add vanilla sugar to taste.
- Separately, whip the cream - one hundred milliliters.
- Wash the orange and gently rub its zest (orange portion).
- Then we clean the fruit and divide it into slices.
- Pour raff into tall glasses.
- Spread the cream.
- Sprinkle them with orange zest. Garnish each serving with a slice of citrus.
As a non-alcoholic option, you can use coffee syrup for orange raff. Given their wide range, you can experiment with tastes, giving the drink caramel, chocolate or citrus nuances.

Black coffee, especially sugar free, is known to be low in calories. What about a sweet, creamy, orange raff? Calorie content of the drink can also be calculated. It is 85 units per 100 milliliters of cocktail. If you want to reduce the nutritional value of the drink, replace the cream with milk and reduce the amount of sugar. But you should remember that with a low-fat product you will not succeed in creating a tasty and beautiful hat.
