A few words about Japanese cuisine
Now many people are passionate about the culinary art of different countries, studying recipes and preparing them at home. Japanese cuisine is one of the most popular and in demand, its dishes are not high-calorie, and the ingredients for them can be purchased at any supermarket. There are thousands of Japanese dishes: sushi, maki or rolls, sashimi, tempura, miso, udon, sukiyaki and much, much more. Sushi and rolls, the main components of which are rice and seafood, are the favorite national Japanese dishes of Russians. One of the most frequently ordered sushi bar dishes in Russia was Philadelphia sushi, the recipe of which varies in different restaurants, but the main ingredients are the same - salmon, rice and Philadelphia cream cheese. Each sushi master has secrets to making rolls, and it will take a lot of time for the rolls to become ideal in both form and consistency. Philadelphia sushi is called uramaki, and they are interesting in that they are “inside out” rolls, that is, rice outside, and nori inside. The sushi name “Philadelphia”, whose recipe, by the way, was created by an American sushi master back in the 80s of the 20th century, got its name due to the main component - tender cheese.
Cooking Philadelphia Rolls
There are many recipes for this dish. But traditionally for making Philadelphia rolls or sushi, the recipe of which is quite simple, you will need the following products: fresh, salted or smoked salmon (to choose from), avocado or fresh cucumber, rice, tobiko or flying fish roe, nori and, of course, cheese "Philadelphia". First, a nori leaf moistened with water is laid on the mat, and a lump of rice is placed on top and evenly distributed on the sheet. Nori with rice is folded in half and Philadelphia cheese is laid out on top in the form of a path. Next to the cheese is a cucumber or avocado, cut into thin slices. Thin strips of salmon are placed on the other side of the cucumbers or avocados. Then, using the mat, the roll is rolled up, tamped a little, and it is given a rectangular shape. After shaping the Philadelphia roll, the mat is removed and the roll is evenly coated with flying fish caviar. Then you need to roll the roll again using the mat, so the caviar is better attached to the rice, and the shape of the roll will become even more ideal. Cut the Philadelphia sushi with a sharp knife dipped in water into pieces no more than 3 cm thick.
Philadelphia sushi, classic recipe with apples, cucumber and avocado for 6 people
To prepare this dish at home, you will need the following ingredients:
- rice - 720 g;
- salmon fillet - 360 g;
- Philadelphia cheese - 210 g;
- nori - 6 sheets;
- medium-sized cucumbers - 6 pcs.;
- ripe avocado fruits - 6 pcs.;
- green apples - 6 pcs.;
- soy sauce, rice vinegar, flying fish roe (tobiko), lemon, ginger, wasabi.
First, you should prepare all the products: cook rice with the addition of rice vinegar, carefully (taking out the bones) cut the salmon into thin rectangles, cucumbers, avocados and apples, cut into thin slices. After covering the mat with cling film, lay half of the nori sheet on it with the shiny side down and moisten it with rice vinegar. Spread the rice with a thin layer, bend the mat and cover the rice so that it is on the bottom and the nori on top. The next ingredient will be cream cheese, which is placed on one of the fruits (vegetables). After that, the roll is folded, in the upper part of which rectangular pieces of salmon are embedded. When the roll is formed, it must be cut into six identical pieces with a thin sharp knife dipped in cold water. Before serving Philadelphia sushi, soy sauce is poured into special dishes, a plate or wooden tray is decorated with ginger and wasabi, the rolls themselves are served with tobiko caviar.
You can replace flying fish caviar with sesame seeds, add various vegetables or fruits, and different types of fish to taste - all this will be appropriate in the Philadelphia sushi. The recipe is convenient in that such a dish can be prepared both immediately before the arrival of guests, and in advance.
