When the season of vegetable harvests comes, we recall adjika. This is a well-known Abkhazian sauce with a pungent spicy taste, which is prepared from tomatoes, hot and bell peppers with the addition of garlic and herbs. Over time, the recipe for the famous sauce has undergone a number of changes. Increasingly, something similar can be observed on supermarket shelves, but the product only vaguely resembles Abkhazian treats. It is better not to take risks and cook the dish yourself.
It is made not only from tomatoes and herbs, zucchini, carrots and even eggplant are also added to the composition. - a kilogram of medium-sized eggplant (choose small vegetables);
- fresh tomatoes - 3 pcs.;
- four cloves of garlic;
- three bell peppers;
- carrots - 2 pcs.
Necessarily need 1/3 cup of vinegar 9%, three bay leaves, peas in the amount of 8 pcs., A tablespoon of salt, 15 grams of granulated sugar and 100 ml of vegetable oil.

Peel the seeds of sweet pepper, peel the carrots, chop everything with a meat grinder or a blender. If desired, add hot chili. Pour the tomatoes with boiling water, remove the peel from them, finely chop and transfer to other vegetables. Pour sugar and salt into the same mass, and pour vegetable oil.
Put the sauce on the stove, bring to a boil, cover and simmer for 60 minutes. After the time interval, add chopped garlic, parsley, peppercorns to the pan, pour the indicated amount of vinegar. Cook for another 15 minutes over low heat.
Now let's prepare the eggplant. We clean the washed vegetables, cut the stalks and cut into small circles. Slightly add, pass on both sides until golden brown. It remains to decompose into sterile containers: at the bottom, immerse part of the fried eggplant, pour hot sauce. Layers alternate. Blue in adjika roll up the lid, tightly wrap in a warm cloth and do not touch for 5-6 hours.
