Salad with arugula and beets: a delicious combination

  • three small beets;
  • sweet onion head;
  • a table bed of balsamic vinegar;
  • one hundred grams of goat cheese;
  • 50 ml of olive oil;
  • one hundred grams of arugula;
  • salt and black pepper to taste.

Peel the onion, cut into thin half rings. Beets are peeled, cut into thin slices. Each piece of root vegetables is dipped in olive oil, spread on a baking sheet, covered with foil. Beets are baked at 200 degrees until tender.

Light Salad with Walnuts

For this tasty and nutritious salad with beets and arugula, you need to take:

  • three hundred grams of beets;
  • 50 grams of peeled walnuts;
  • three teaspoons of olive oil;
  • one head of red onion;
  • two hundred grams of arugula;
  • three hundred grams of carrots;
  • on a teaspoon of Dijon mustard and honey;
  • half a teaspoon of red wine vinegar;
  • one hundred grams of feta cheese.

The oven is heated to 190 degrees. Peel the carrots, cut in circles, bake for about thirty minutes, sprinkled with olive oil and sprinkled with salt.

Separately bake nuts for five minutes. Boiled beets, cut coarsely. The cheese is crushed in cubes, onions in half rings.
