Nut jam

green walnuts with honey
Green walnuts with honey - a spicy, very special jam with a pleasant, specific taste. True, it should be eaten carefully, since this is not an ordinary treat, but a therapeutic product used for gastrointestinal diseases. But itโ€™s also pleasant to treat yourself with a seagull. Green walnuts with honey can be cooked when their kernels are still being formed. The shell did not have time to ossify, and the middle resembles a liquid substance. It is at this stage of maturity that they are from the beginning of June (numbers 5-6) for 10-14 days. Then it is impossible to collect them for the purpose of making jam, the product will not be suitable for this. It is worth noting: green walnuts with honey are considered a delicacy and are cooked mainly only at home.

Now the technology. Each nut should be peeled like a potato with a knife. Just keep in mind: it contains a huge amount of iodine. First, your hands will be painted in the appropriate color. Then the skin comes off from them, as if from burns. In principle, these are burns. Therefore, be sure to use rubber gloves and it is better to wear 2 pairs on each hand. When the โ€œraw materialโ€ is ready, it is soaked in cold water for several days so that bitterness and excess iodine come out of the nuts. Some recipes suggest pouring them with a lime solution. After a few days, when the product settled, each nut should be chopped with a fork. This is done so that in the jam green walnuts with honey are well cooked and saturated with sweetness. Now the proportions of the ingredients. For every 1 kg of nuts you will need: 2 cups of water, 500 grams of honey, 1 medium-sized lemon, vanillin and cloves. Boil water, dissolve honey. Squeeze the juice of lemons.

walnut kernel
Put the nuts there and leave them to boil; keep the fire large for 7 minutes (remove foam). You can immediately add cloves and vanilla. Then turn off the brew so that it cools down slowly. After some time, the process resume. Each walnut kernel should soften and acquire an amber color. When the jam has boiled for 10-12 minutes, it is again removed from the fire. The third time it is brought to readiness and laid out in previously prepared cans, rolled up. To make green walnut even tastier, recipes suggest at the last stage to put grated orange zest or lemon, chopped into small cubes, in the jam. Boil then it needs a little longer.
