From ancient times, crumpets replaced humanity with bread and rolls, as a universal addition to the main dish. They were cooked salty and sweet, sharp, glazed and sprinkled with chocolate chips, baked at various celebrations and taken with them on the road. Over time, bread and buns replaced ugly products. But still, sometimes, on a subconscious level, I want to taste the past and understand: yes, such homemade food is really the best.

Simple recipe
Fried dumplings from dough based on yogurt is the fastest and most convenient way to cook. Products turn out magnificent, easy. At the same time, they are suitable both for sweet sauces for tea, and for spicy or salty, which can be eaten with first courses instead of bread. What are Ukrainian donuts with garlic under borscht!
Cake recipe (ingredients):
- 0.5 liter yogurt, which if necessary can be replaced with kefir;
- 0.5 teaspoon of salt and the same amount of soda;
- an incomplete tablespoon of sugar;
- one egg;
- about five glasses of flour.
How to make dough?
Judging by the ingredients, you can guess that the recipe for kefir muffins is so simple that even a complete layman in the kitchen can cook them. Pour sugar, salt and soda into kefir, mix and leave for a couple of minutes: the mass will start to foam and bubble. This is a signal that it is time to lay the flour (it must be previously sifted) and knead the soft dough. The amount of flour in the recipe is indicated approximately, since the quality of this component is always different, depending on gluten, and yogurt is of varying degrees of density.
Flour should be covered in small portions and constantly stir well, achieving a soft lump of dough that will be very malleable and slightly sprawling. This should not be scary. Indeed, the softer the dough, the more magnificent the finished product will be.
Knead the dough on the table, powdered with flour, and leave to rest for 10 minutes. Then you can start baking.
Heat treatment
Typically, according to the recipe, the crumpets are fried in a pan in a large amount of vegetable oil or cooking oil, then the products fully justify their name and are inflated with a lush cloud. Roll out the dough on the table with a rolling pin to a thickness of one cm and cut into pieces of arbitrary shape (usually these are squares or triangles).

Yeast Bread: Essential Ingredients
The recipe for dumplings from yeast dough is a little more complicated, but it's worth it: the products from it are very soft, airy. It is impossible to break away from them. The recipe contains the following ingredients:
- 400 ml of fresh milk;
- 6-8 grams of dry yeast;
- 80 grams of oil (any);
- two egg yolks;
- 60 grams of sugar;
- 1/2 teaspoon of salt;
- about 800 grams of flour.
Step cooking
Step number 1. Heat the milk to body temperature and dissolve sugar and salt, as well as yeast in it. Leave it warm for a few minutes to activate the yeast: a cap of foam appeared on the surface of the milk.
Step number 2. Melt the butter in a separate bowl (preferably in a water bath), add the yolks to it and grind thoroughly. Add the egg mass to the yeast, mix and, in small parts, pouring flour, knead everything thoroughly.
Step number 3. It is important not to abuse the amount of flour so as not to spoil the dough: the softer it is - the tastier the crumpets will become. Knead the dough on the table for 10 minutes, achieving perfect elasticity, and then place in a clean dish and cover with a towel. Leave in a warm room for an hour or a half: the dough should double in volume.
Step number 4. If the temperature in the room is satisfactory, then the mass will come up very quickly, and if it has not grown in an hour, you need to find a warm place. Roll out the finished dough into a layer one centimeter thick, cut the crumpets of any shape and fry in oil, as described above.
With garlic
The recipe for cakes that are prepared in Ukraine for borscht is also not difficult: its ingredients are usually available to everyone because of their low cost.
- 500 ml of whey, which can easily be replaced with kefir, yogurt or sour cream, one third diluted with water;
- 1 tbsp. a spoonful of sugar;
- 1 teaspoon without a hill of salt and the same amount of soda;
- one egg can be added at will, but this is not necessary;
- 3.5-4 cups flour.
The dough is kneaded in the traditional way: salt and sugar are dissolved in kefir, an egg and soda are added. Then, constantly stirring the mass with a spoon, flour is introduced. Knead the dough until thickened. Then, kneading with hands continues. What to do next?
You need to knead the dough on a table and roll it into a layer, cut into strips of 2 cm wide and 5-8 cm long, or simply into squares with a side of five centimeters. Deep-fry until golden brown, turning over with a fork. Ready-made crumpets are laid out on paper to remove excess fat, and then placed in a wide bowl and sprinkled with garlic sauce.
How to make garlic sauce?
For the preparation of aromatic gravy, garlic is used in an arbitrary amount. If you want to be sharper, then you should take four five teeth per 1 cup of liquid. Clean the teeth and grind in the press, mix with 1/2 teaspoon of salt and a pinch of black pepper. Add 0.5 cups of boiled water, mix and let the mass cool to room temperature. Pour the crumpets and mix, so that the sharp mixture is evenly distributed over the products.
You can also additionally make another portion of the sauce, replacing the water with the liquid part of the borsch, and do not water the crumpets, but dip them into the sauce when eating. Anyone who has tried such an option will not eat borshch anymore, only with crumpets and garlic sauce.
Sweet Cocoa Dumplings
This recipe (with photo) of cakes is specially used for making sweet aromatic products with which it is very tasty to drink cocoa. Their distinctive feature is flavors, which are added to the dough during kneading, as well as a large amount of sugar. To prepare the dough for sweet donuts, you must perform these steps step by step:
- 400 grams of ryazhenka mixed with 3 tbsp. tablespoons of sugar and a pinch of salt. Let the grains melt.
- In a separate bowl, mix 3 tbsp. tablespoons of butter or margarine and two eggs, achieving a uniform consistency. It is convenient to pre-melt the oil in a steam bath.
- Mix the egg mass with ryazhenka, pour 0.5 teaspoon of soda and mix well.
- Add flavor to taste. It can be vanilla, grated lemon peel, cinnamon.
- Sift the flour (800 grams) and add in small parts to the sweet mass, kneading a soft dough. Knead it thoroughly on the table and leave for half an hour to rest, covering it with a cloth.
When the dough reaches the condition, roll it into a layer and cut round donuts with a glass, you can also use cookie cutters in the form of hearts, stars, etc. Fry the donuts, according to the recipe, in a deep-frying pan and sprinkle with hot powder, which is still hot. under the influence of temperature it will melt, absorbing into the pulp, turning the product into a sweet treat.
