  • 6-8 large green tomatoes, cut into small pieces;
  • 2.5 cups of water;
  • 2.5 cups of white vinegar;
  • 3 tablespoons of table salt or sea salt;

  • 4 cloves of garlic (peeled);
  • 2 tablespoons of coriander seeds;
  • 4 tablespoons of yellow mustard seeds ;
  • a little black pepper;
  • 4 bay leaves;
  • 4 small red chili peppers (recommended).

Take water, vinegar, salt and sugar, add the cloves of garlic into it and cook the brine in a pan of chemically neutral material (such as stainless steel). Boil the mixture for 5 minutes.
