Mushroom, for example, is prepared simply. To give an additional taste of mushroom sauce to buckwheat, a handful of dried porcini mushrooms can be added to fresh mushrooms or oyster mushrooms.

Products for cooking:

  • Champignons - 300 g.
  • Sweet onion - 2 pcs.
  • Young garlic - 3-4 cloves.
  • Vegetable oil - 50 ml.
  • A pinch of salt and sugar.
  • A handful of dried porcini mushrooms.
  • Soy sauce - 65 ml.
  • Ground black pepper.
  • Some fresh greens.

How to cook mushroom sauce?

Soak dry porcini mushrooms in hot water. After the mushrooms swell, do not drain, but let it settle and pour without residue into clean dishes.

Peel onions and garlic. Grind them very finely. Sauté the garlic and onion until tender in warmed oil.

Cut the soaked mushrooms into small cubes, add to the onion. Warm in oil for 5-7 minutes. Grind champignons by cutting them into thin slices. Add them to the pan, pour in soy sauce and a little mushroom broth, add salt and sugar, pepper and simmer mushrooms for 10-12 minutes until cooked.

Pour the tinned canned tomatoes into the pan, add salt and spices and, having covered the lid, simmer the meat in the sauce for about 45 minutes, adding water if necessary.

How to cook vegetable sauce?

Peel vegetables, cut onions into very small cubes, grate the carrots on a fine grater. Sauté onions until golden.

As soon as the onion is browned, add the carrots to the pan and fry the vegetables until cooked. Season with spices and salt, put a bay leaf and, if desired, a little fine sugar to balance the acid in the gravy.

Transfer tomato paste to vegetables and warm it well, then add sour cream, a little water, vegetable or chicken broth. Extinguish the gravy for 7-8 minutes, try on salt and spices, add chopped fresh herbs and a little more sour cream.
