Good, fresh meat and tasty, juicy prunes are two independent products. Combining them in one dish, you get the best result and the most delicious holiday meat, saturated with the smell of prunes. Choose acidic and juicy prunes, it is useful for high blood pressure and various heart diseases, as well as diseases of the kidneys and gall bladder. High-quality fresh meat contains a large amount of protein, vitamins and minerals. A dish of these two products will not only be delicious, but also very useful for your body. Oven-cooked prunes made using any of these recipes will delight your guests.
Prunes & Garlic Meat
Take:
- one and a half kilograms of pork
- 300g pitted prunes
- one large head of garlic
- ten tablespoons of brandy
- 3 tsp freshly ground pepper mixtures
- 1 tsp ground paprika
- 4 tsp salt (coarse grinding)
- 3 tbsp olive or any other vegetable oil
This recipe will allow you to cook very tasty meat. Pork in the oven requires a long preparation and is quite suitable for a festive feast. The day before cooking, we take meat, it needs to be washed and dried, rubbed with pepper, paprika, pour cognac, gently pat it on all sides with your hands, wrap it with cling film and put it in the refrigerator for a day. Soak prunes for a day in cognac.
After a day, we dry the meat with paper towels to remove excess moisture, grease it with olive oil and quickly fry on both sides in a hot skillet with thick walls, from 3 to 5 minutes each side, until golden brown.
We cover the mold with a large sheet of foil (larger than the mold in size), grease the bottom with the remnants of oil, spread half the prune berries. The meat must be stuffed with slices of garlic (each can be cut lengthwise and put into cuts in the meat, making them a sharp knife), sprinkle with salt on all sides, put on prunes. Top and sides to place the remains of prunes.
Cover the mold tightly with foil. Preheat the oven at this time to 200 degrees. We put the meat in it for half an hour, then you need to reduce the heat to 180 degrees and bake for about 2 hours. In the baking process, we open the foil two or three times and pour the pork with the resulting juice. At the end of cooking, we open the foil for the last time, once again pour the meat with juice, close the foil, cool it and put it in the refrigerator for a couple of hours. This method is not like other recipes, pork meat in the oven, can be served cold, with a frozen sauce.
Meat with prunes in the oven in the sleeve.
For a pound of meat (beef) we take:
- ¾ cup prunes
- big carrots
- two medium onions
- one pod of sweet pepper
- three tablespoons of vegetable oil
- two tablespoons of sour cream and lemon juice
- ground pepper, sugar, salt
We cook meat with prunes in the oven, for this we cut the beef into medium slices, add salt, add lemon juice, vegetable oil, ground pepper, mix everything and leave to marinate at room temperature for an hour and a half.
We thoroughly rinse the prunes, fill them with very warm water - for the same 1.5 hours.
Cut onions into half rings, carrots - in large circles, sweet pepper - in strips. After an hour and a half, mix everything with prunes and meat, salt again.
Further options are possible:
1) Fold everything in a ceramic mold, pour water in which the prunes were soaked, add sour cream, salt, pepper, cover and simmer in the oven for about 1.5 hours. The liquid should completely cover the meat.
2) Put the prepared meat with prunes and vegetables in a baking sleeve, pour half a glass of water from under the prunes there - and bake in the oven for 1.5 hours.
Serve meat with prunes in the oven should be hot, and you can serve rice, a mixture of rice or some vegetable salad for a side dish. This recipe is also suitable for a holiday.
If you wish, you can replace beef with pork in both recipes, then the cooking time will decrease by about half an hour. But in this case, the dish will turn out to be festive and incredibly tasty.
