Amazingly tasty in itself, fatty, with dense meat, this fish will be a great filling for our masterpiece. Ready? Getting down. So, the agenda: “How to make a halibut pie”, and in several variations.
Halibut pie
The recipe for this dish involves the preparation of dough. Surprised by our refinement? Not worth it. Because, besides this option, we will also try to make a fish pie with halibut from puff pastry and ... without it at all. But first things first. So, the traditional way.
To prepare this amazingly delicious dish, we stock up on the following ingredients.
- Kefir (you need one glass).
- Vegetable oil (100 ml).
- Eggs (2 pcs.).
- Flour (4 cups).
- Margarine (1 pack).
- A teaspoon of soda.
- Salt (half a teaspoon).
- Sugar (1 teaspoon).
- Halibut (700 g).
- Ground black pepper (according to one’s own preferences).
- Onions (3 or 4 pcs.).
- Dill.
- Basil.
- Parsley.
How to cook
The first step is to knead the dough. To do this, you need to melt the margarine, mix it with kefir, add one egg, butter, soda, sugar, salt and flour. Stir everything thoroughly. Then prepare the filling. Halibut meat is removed from the bones (if any), then cut into thin strips, salt and pepper. We peel the onion, cut it into cubes, fry. By the way, if you want, you can fry mushrooms with onions along with onions as an additional ingredient. Mushrooms will make halibut pie even tastier.
We divide our dough into two parts: large and smaller. We roll out the first and put it on a baking sheet or in a mold, oiled. Then we distribute half the fried onion, finely chopped greens over the entire surface of the dough. Then we put halibut pieces on top and sprinkle with the remnants of onions and all the same greens. A small digression. If someone is negative about the combination of fish and parsley, dill and basil, then the last components can not be used at all. So, the filling is ready. Close it on top with a rolled out second piece of dough, carefully pinch the edges. We send the future pie to the oven already preheated to one hundred eighty degrees for twenty minutes. Then we take it out, grease it with a beaten egg, return it for another ten minutes to the oven. That's it, our halibut pie is ready. You can call home to the table and show off your culinary skills.
And now we’ll simplify the task a little, because for the embodiment of the next recipe in a gorgeous dish we’ll take ready-made dough - puff pastry. True, in this case we need not only fresh fish, but also smoked.
Halibut Layer Cake
Yet it is not in vain that all ingenious is called simple. You can make this delicious pie very quickly. Moreover, even special culinary skills are not needed. However, if we are someone who will try our dish, and say that today is the first time in their life they have come to the oven, they will not believe us. Because the magnificent view of the cake, crisp and delicate taste of smoked toppings will be vivid witnesses to the fact that not a single chef of the most prestigious restaurant has prepared it for the hostess.
But before you crown yourself with the laurels of an extra-class master, you must run to the store for:
- Packing puff pastry.
- Smoked halibut (it will need 500 g).
- Fresh halibut (it is better to take fillets, 300 g will be enough).
- Milk (250 ml).
- Sour cream (125 g).
- Butter (50 g).
Well, one egg, a glass of flour, an onion, a couple of cloves of garlic, salt and pepper can be found in any thrifty housewife.
Cooking technology
Peel the onions and garlic, cut them arbitrarily, fry in butter (creamy). We cut the fish in the same way as in the previous recipe. Add it to the frying, then fill with milk. Leave to simmer for about fifteen minutes. This time will be enough to deal with the test. We divide it again into two parts (having not previously forgotten to defrost it), we roll them into layers. Lubricate the form or baking sheet with oil, distribute a larger layer on the surface. The filling is almost ready. It remains to pour sour cream into it and bring to a boil.
As soon as the mixture cools down a bit, put it on the dough, and then close it with a second layer. Pinch the edges, grease the surface with an egg. Do not forget to make several holes for the exit of steam. If you wish, you can decorate the surface with figures cut out of dough - say, fish. However, even without them, our pie with halibut from puff pastry will be stunning. Just do not forget to put it for half an hour in a preheated oven to two hundred degrees. And that’s all. The dish is ready. The reputation of the best cook is ensured. There will not be any crumbs from the meal, and the next day everyone who tastes it will demand a halibut pie for breakfast, lunch and dinner. They just don’t know yet that we have a trump card up our sleeve. Which one? We will offer them a fish pie in the English interpretation.
Misty Albion Recipe
We will make this halibut pie, as promised, without dough. By the way, the authors of the recipe - the British - argue that a real fish pie must be prepared in this way. Well, let's try. To do this, stock up:
- Potatoes (need 1 kg).
- Halibut, naturally (400 g).
- Cheese "Cheddar", or similar to it (150 g).
- Butter (80 g).
- Milk (200 ml).
- Olive oil.
- With salt, you can pepper - according to your own preferences.
Cooking
Potatoes need to be peeled, washed, chopped and boiled. Everything is like ours. Here, while the British can not offer anything new. The potato is boiled. The time necessary for its preparation must be spent with benefit, so we will deal with halibut. We put it in a greased form (olive!) Form, pepper and salt, pour milk, bake for twenty minutes. The temperature is one hundred eighty degrees. From mashed potatoes and butter. Divide it into two parts. We take out the finished fish, disassemble it into pieces. Instead, lay the first part of the mashed potatoes in a layer with a layer, then the filling, i.e. halibut, onto it, form the top of the pie from the remains of crushed potatoes. Put in the oven. Cook at a temperature of two hundred degrees for another ten minutes, then remove, sprinkle with grated cheese and again send to the oven for another ten minutes. The cake is ready. You can start tasting.
True, especially corrosive ones may notice that the halibut pie in English deftly disguised itself as our potato casserole. Well, we will not argue. Let the casserole. Delicious anyway!
