What is filo pastry?

What is strudel?

This delicious pie came to us from Austrian cuisine. Traditionally, this is a dough roll with apples. Often prepare strudel from filo dough or puff pastry. Its filling may include apples with various additives, such as cinnamon, vanilla, cardamom. Sometimes, for a change, cranberry berries or raisins are added there. Cooking Filo Dough at Home

There is really nothing special about this test. It can be bought ready-made at any store. But, as usual, a home-made dish is usually tastier, fresher and more reliable. Therefore, if you have time, then try to make a filo yourself. There are many recipes for the dough, and some of them differ: somewhere, for example, eggs are laid in it. Therefore, choose the recipe to your liking. Here is one of the options.

To make the dough you will need:

  • one glass of flour;
  • approximately 2 tablespoons of sugar;
  • half a glass of water;
  • a pinch of salt;
  • half a teaspoon of soda.

The cooking process is as follows:

  • Heat the water to 50 degrees and dilute the salt in it until completely dissolved.
  • Sift flour into a convenient container, add salt water and vegetable oil.
  • Pour in soda.
  • Mix the filo dough thoroughly. Do not add more liquid - in the process of kneading the dough will reach the desired consistency. The finished dough should be elastic and not stick to your hands.
  • Divide it into several portions and beat off each strongly.
  • Roll the balls, cover them with cling film and put in the refrigerator for about one hour.
  • Then roll each piece as thin as possible.
  • After this, the resulting sheets need to be stretched by hands in different directions, but carefully so as not to tear. The dough should resemble paper, be almost transparent.
  • Lay out the finished sheets with parchment. If you are not going to freeze the dough, then roll it gently and roll it under a damp towel, as it can dry quickly and become brittle.

By the way, the finished dough in the freezer can be stored for up to six months. Just do not freeze it twice, as it will lose its properties.

To prepare this roll, you will need about 20 sheets of filo and about 1 kg of apples. Besides:

  • lemon juice;
  • dried berries or raisins, if desired - 100 g;
  • flour;
  • butter - 150 g;
  • sugar - 100 g;
  • cinnamon - half a teaspoon;
  • icing sugar for decoration.

The total time for making strudel strudel from filo dough is about 40 minutes.

  • Peel the apples, remove the core and chop finely. In order for the apples not to darken, they should be poured with lemon juice, in addition, this will give the strudel a more refined taste.
  • Soak dried fruits in boiling water for 10 minutes, finely chop if large.
  • Pour flour onto the work surface so that the bottom layer of dough does not stick.
  • Next, you need to melt the butter and, laying out the sheets of dough, lubricate them in turn. If you do not grease the sheets, the dough in the oven will dry out and be tasteless. Thus, smear 10 sheets.
  • Mix chopped apples with dried fruits or berries, sprinkle with sugar and cinnamon. The mixture should be dry, without excess juice. Put half the filling on the filo sheets and roll the roll, pinching the edges tightly.
  • Spread the strudel on the baking sheet with the seam down. Repeat the procedure with the remaining leaves and the other half of the apple filling. On top of both strudel grease again.
  • The oven must be preheated to 200 ยฐ C. The baking time is 20 minutes. Look for strudel readiness by color - it should become golden.

Allow the roll to cool slightly, then sprinkle with icing sugar. Your filo pastry strudel is ready!

Filo pastry strudel with cottage cheese

Another strudel variant, no less tasty. To prepare it, you will need:

  • low-fat cottage cheese - 200 g;
  • filo dough - 20 sheets;
  • butter - 150 g;
  • yogurt - 3 tablespoons;
  • vanillin - a pinch;
  • sugar - 2 tablespoons;
  • berries - optional.

  • The recipe is similar to any other filo dough.
  • You need to melt the butter and grease each leaf separately.
  • Take 10 sheets per roll.
  • To prepare the filling, mix the cottage cheese with yogurt (can be replaced with low-fat sour cream), mix thoroughly, add sugar, vanilla and berries. Beat the mixture with a blender until smooth.
  • Put half the mass on oiled sheets of dough. Gently wrap in a roll and place on a baking sheet.
  • Use the second part of the filling for the remaining 10 leaves of dough.
  • Preheat the oven to 200 ยฐ C. Bake rolls for 15-20 minutes.
