Today we will talk about the most difficult to manufacture, but the most versatile to use - puff. Performed according to one recipe, it can be used both for delicious meat pies and for sweet pastries. Puff pastry products not only have an amazing, delicate taste, but also quickly and simply cook (of course, if the dough is prepared for them in advance).

Puff pastry

The set of basic components for puff pastry is small. It consists of only four products:

  • oil (margarine);
  • water;
  • flour;
  • salt.

Depending on the ingredients, the dough can be divided into classic puff and simplified.

Preparation of the classic puff pastry: knead the dough from flour and water of a soft consistency, after which chilled butter is mixed into it. Butter and flour are taken in equal amounts. The manufacturing process of such a dough is quite lengthy: a dough sheet is rolled out, oil is put in the middle, everything is folded with an envelope, rolled out again. Then the dough is folded and put into the refrigerator. After some time, the cold dough is rolled in the opposite direction, rolled up and again put in the cold. The rolling procedure is repeated several times. Then you can start baking products from puff pastry.

Puff pastry

We offer several types of simplified test:

  1. Instant puff pastry. In a bowl put chilled butter and flour, grind everything into small crumbs with a knife.
  2. Yeast puff pastry (sometimes called β€œtorn”). Take a double rate of flour and one of oil. First start the usual yeast dough. Then they roll oil in it.
  3. Curd puff pastry. Cottage cheese, butter and flour are taken in equal proportions. Cold chopped butter is added to the flour, on top of it, the cottage cheese is rubbed through a sieve and the dough is kneaded.
  4. Creamy puff pastry. Prepared according to the previous recipe. The components for it are as follows: flour, butter, sour cream (cream can be used). The following proportions are observed: 2: 1: 0.8.

What to cook from puff pastry

This dough is very convenient to use. It can be frozen in the freezer, after thawing it does not lose its nutritional value. Puff pastry can be made by yourself or purchased at any grocery store. All family members, especially children, can be connected directly to the production of culinary products, no doubt this will give them great pleasure. We offer several recipes for puff pastry buns.

Buns with poppy seeds

The dough for such baking can be used to your taste - a simple puff or yeast. Making baking and baking it will take no more than 25 minutes. To make buns, we need:

  • sugar - 6 tbsp. l .;
  • puff pastry - 400 g;
  • poppy - 6 tbsp. l .;
  • 2 eggs.

Roll out the dough in the form of a rectangle, sprinkle with sugar and fold in three layers. Then you should divide it into three parts and make rolls. You can choose the size of the roll to your taste. At the next stage of cooking, beat the egg, grease the surface of each roll and sprinkle it with poppy seeds. Then cut the dough piece in equal slices. Buns are baked at temperatures up to 180 Β° C for about 25 minutes, until golden brown.

Buns with cottage cheese and raisins

For the filling, it is recommended to use not only raisins, but also various dried fruits, berries and nuts. For these buns, puff pastry is best taken without yeast. Required Products:

  • puff pastry - 500 g;
  • dried fruits - 150 g;
  • cottage cheese - 200 g;
  • sour cream of 20% fat content - 50 g;
  • vanillin and sugar to taste;
  • one egg.

First, prepare the dried fruits: rinse them well and fill them with boiling water for several minutes. Drain and pat with a paper towel. Mix sour cream with the egg and add to the curd, add sugar and vanilla to the same. The mass mixes well. By the way, using a mixer is not recommended, the fact is that the product will acquire a more liquid consistency. Add dried fruits to the curd mixture and put it in the refrigerator.

Roll out the dough into a large rectangle, spread the filling along the entire perimeter, leaving the edges free. Using a silicone mat or towel, the dough is rolled up. It is cut into equal equal parts with a width of about 6 centimeters. Buns are baked for 30 minutes at an oven temperature of 180-200 Β° C.   • milk - 100 ml;
  • butter - 50 g;
  • puff pastry (not yeast) - kilogram;

  • poppy - 150 g;
  • powdered sugar - 1 tsp.

If the dough is frozen, it should be allowed to lie down for one hour at room temperature. At this time, you can make poppy seed filling. It must be washed, filled with hot water (milk if desired), add sugar and butter, cook on low heat. Keep on the stove for so long until the mass acquires a uniform consistency and the poppy becomes soft.

Dough is spread on a flat surface dusted with flour and rolled into a large layer. Chilled poppy seed filling is laid on it and is well leveled. In order for the product from puff pastry to be more even and dense, the filling using a rolling pin should be drowned slightly in the dough. Dough with poppy seeds, gently pressing, roll into a roll, lay on a baking sheet covered with parchment and bake for twenty minutes. Cake "Napoleon": a classic recipe

This dessert for many years does not lose its popularity, rather, on the contrary. Confectioners create new recipes for an amazing cake. We will consider the manufacture of "Napoleon" from puff pastry according to the classic recipe, with custard. The dough can be taken ready-made, but from a self-made product, the cake will be even tastier.

"Napoleon" from puff pastry

In order to prepare "Napoleon", we take the following ingredients:

For the dough:

  • flour - 420 g;
  • margarine - 200 g;
  • salt - 1.5 g;
  • water - 80 ml;
  • egg - 1 pc.;
  • lemon juice - 2.5 ml.

To prepare the cream:

  • milk - 100 ml;
  • one egg;
  • sugar - 200 g;
  • butter;
  • vanillin - 5 g.

We start the puff pastry according to the recipe by the already known method and put it in the refrigerator. Let's cook custard.

Sugar and egg mix and grind until white, add vanillin, mix. Pour milk into the cooked mass and bring to a boil. As soon as this happens, immediately remove the mass from the fire and cool. Combine the butter (necessarily softened) with the egg-milk mixture and beat with a mixer until a cream is formed.

Divide the dough into six parts of the same size, roll it very thinly and bake in the oven (5-10 minutes) until a slight blush. Puff pastry cakes for Napoleon can be baked in a pan. Ready cakes are smeared with cream, aligned around the edge, the excess is removed and used in the future to decorate the top of the cake. If desired, dessert can be decorated with berries, nuts, almond petals.

Puff pastry strudel

Strudel can be prepared from this type of dough both as an appetizer and as a dessert. It depends on the choice of filling. We offer puff pastry strudel recipe with herbs and bacon. We will need:

  • 150 g of bacon;
  • 32 ml rust oils;
  • 1 bunch of dill, cilantro and parsley;
  • 500 g puff pastry (yeast);
  • 30 g of caraway seeds;
  • 1 tbsp. milk;
  • salt;
  • egg.

The dough is rolled into a thin layer, washed washed greens are laid on it, on top - bacon cut into slices and another layer of greens. Season with pepper and salt to your liking, turn into a roll and leave for 20 minutes to proof. Ingredients:

  • cinnamon - 3-4 tsp;
  • raisins - 50 g;
  • low-fat cottage cheese - 50 g;
  • puff pastry - 1 layer;
  • green apples - 2 pcs.;
  • a pinch of sugar (preferably without it).

Apples, raisins, cottage cheese, cut into small cubes, are placed on a rolled dough sheet, everything is sprinkled with cinnamon on top. The dough rolls in rolls, from above should be made not very large cuts with a knife, grease with egg yolk and place on a baking sheet with baking paper. The product is baked for half an hour.

  • cherry - 600 g;
  • sugar - 150 g;
  • starch - 60 g;
  • flour - 60 g;

  • icing sugar - 75 g;
  • puff pastry - 900 g.

First, prepare the cherries. If we use fresh berries, they need to be washed, remove the seeds. Defrosted frozen fruit without seeds, we get rid of excess fluid. Put the cherries in a bowl, fill with sugar and leave for 20 minutes. When the sugar has dissolved and a sufficient amount of juice appears, pour the starch into the mixture and boil it to a thick jelly, then cool.

We proceed directly to the manufacture of puff pastry puffs. The dough is rolled 3-4 mm thick, and the same squares are cut from it. Each of them is conditionally divided diagonally, and on one of the halves we make small incisions, slightly not reaching the edge. On a half without cuts, put a spoonful of the filling and close the top with the second half. As a result, we get beautiful, openwork triangles. At 220 Β° C, the puff is baked for a quarter of an hour. Please note: before boiling in the oven, products are greased with an egg. We offer to make the morning meal more interesting: serve an original puff pastry dish for breakfast - open puffs. It will take no more than 15 minutes to prepare such food, and you will get great pleasure. For him, take:

  • 300 g puff pastry;
  • eggs
  • Parmesan;
  • slices of bacon;
  • any greens;
  • salt;
  • pepper.

Roll out the dough and cut it into squares of 7-10 centimeters wide. Put them on a sheet covered with baking paper and raise one centimeter high sides at the squares. Break one egg into each of them, put slices of bacon. Dish with salt and pepper, sprinkle with herbs and grated parmesan. The culinary product prepared according to this recipe turns out to be unusually tasty, has a very delicate creamy taste. To prepare our puff pastry pie with salmon, take:

  • dough (yeast-free) - 500 g;
  • eggs - 2;
  • 150 g of cheese and cream;
  • 300 g of slightly salted salmon;
  • salt pepper;
  • dill - 1 bunch;
  • garlic - 2 cloves;
  • spinach - 400 g.

Puff pastry for the pie is placed in a form covered with parchment, so that its edges hang slightly. For the filling, eggs are beaten, cream is added to them, the whole mass is whipped again. Finely chopped salmon, grated cheese, garlic and dill are placed in it. Spinach (you can use fresh and frozen) is chopped, laid out in a mold on the dough. And on it - a creamy fish mixture. We offer an original dish of puff pastry. To create it you will need:

  • 1 pack of dough;
  • 2 tbsp. mashed potatoes;
  • 4 slices of bacon;
  • 1.5 tbsp. grated cheese;
  • 3 tbsp chopped green onions;
  • 50 g sour cream.

To make the sauce:

  • 1 tbsp. l mayonnaise and sour cream;
  • 1/8 tsp dried garlic and pepper;
  • salt.

All components intended for the sauce are combined and mixed. In a shallow container, you need to mix cheese, mashed potatoes, bacon (sliced ​​in pieces), sauce and green onions. According to the recipe, divide the puff pastry into 8 uniform squares, which then put in a cupcake mold. On top of them is laid out the filling in the amount of one tablespoon. The cups are baked for 17 minutes and decorated with sour cream and feathers of green onions (beautifully chopped).

Cheesecake

This delicious cream cheese dessert, encased in a crispy puff pastry, will appeal to any foodie. For cooking, you will need the following ingredients:

  • dough - 400 g;
  • cream cheese - 250 g;
  • sugar - 150 g (plus 2-3 tbsp. l. needed for sprinkling);
  • next oil - 80 g;
  • vanilla sugar.

Roll out two layers of the same size, put one of them into shape. Mix all the products listed in the recipe and then beat. After that, pour the mass into a mold and cover with a second layer, carefully seal all edges. Leftover dough to use for decoration. Confectionery is baked for half an hour at 180 Β° C. The most tender and delicious baking is obtained using puff without yeast dough. Despite the fact that making such a test is a laborious process, the result is worth it. We advise you to cook a hearty and tasty dish of puff pastry - envelopes with minced meat. Take the necessary components:

  • mixed forcemeat (beef, pork) - 300 g;
  • half of the bulb;
  • puff pastry - 500 g;
  • one egg;
  • garlic;
  • pepper, salt.

First you need to cook the minced meat, add onion, chopped with a small cube, garlic, spices to your taste. All mix well.

We prepare dough pieces, cut into squares of 8-10 centimeters wide. Minced meat is placed in the middle of each, the dough is plucked in the form of an envelope. Finished products are laid out on leaves, smeared with a lezon and baked for half an hour. It is best to use products hot.

  • smoked chicken breast - 300 g;
  • one chicken egg.

Finished dough is cut into long strips 2 cm wide. One strip is taken, finely chopped breast and cheese chopped on it are laid out on it.
