  • Half a lemon.

  • 200 ml cream.
  • 200 ml of dry white wine.
  • 200 ml of chicken stock.
  • 2 tsp powdered mustard.

Preparing such a dish of trout is quite simple. Washed, peeled and gutted fish is cut into steaks, watered with lemon juice and left for half an hour. At the end of the indicated time, the pickled pieces of trout are salted, rubbed with seasonings and fried in a greased skillet for several minutes on each side. The browned fish is spread on a refractory form, and chopped onions are sent to the vacated container. After a couple of minutes, they add wine there and wait until its volume is halved. Then cream, mustard, broth, salt, spices and flour are introduced into the pan. All this is briefly warmed over a small fire, supplemented with chopped dill and poured over to the fish. Bake the dish for about twenty minutes in a moderately heated oven.

Fish in Citrus Sauce

This unusual trout dish is ideal for special occasions. It differs not only in a pleasant taste, but also in a well-perceptible citrus aroma. To prepare it, you will need:

  • 500 g trout fillet.
  • 3 oranges.
  • 2 lemons.
  • 2 tbsp. l soft butter.
  • 3 tbsp. l flour.
  • 1 tsp brown sugar.
  • 9 tbsp. l olive oil.
  • Salt and basil.

Washed and salted fillets are spread in a deep non-metallic container. Six large spoons of olive oil and juice squeezed from one lemon and two oranges are poured there. After an hour, the fish is breaded in flour, fried in an oiled pan and transferred to a plate. Butter and the liquid in which the trout were marinated are sent to an empty vessel. All this is sweetened, seasoned with spices, supplemented with chopped basil and warm for a short time on the included stove. The fish is watered with the resulting sauce and garnished with slices of the remaining citrus.
