From green tomatoes, which are harvested in large quantities in autumn, various preparations for the winter can be prepared. They are salted and pickled whole in jars and barrels. But adding other ingredients, you can cook a delicious salad of green tomatoes for the winter. I offer several recipes for this dish.
If the tomatoes did not have time to ripen, then prepare a delicious salad from them. It will take a few ingredients and a little more time to make a tomato salad for the winter. We take 3 kilograms of green tomatoes and cut them into small slices. Add to them 1.5 kilograms of carrots, which need to be peeled and grated, preferably large. We cut the same amount of onion in half rings. Mix all vegetables and sprinkle with 100 grams of salt. Stir and leave for about 10 or 12 hours.
Next, pour 300 grams of any vegetable oil into the pan, the same amount of vinegar 9% table, the same amount of sugar and a few peas of pepper. You can add a bay leaf. We put the pan on the fire and let the marinade boil. If a lot of liquid has formed in the vegetables, then we drain the excess. Pour salad with hot marinade and put on fire. Do not forget to mix. Cook the workpiece for about 30 minutes. In the meantime, you need to wash and dry the cans. Pour the green tomato salad into the banks for the winter and close it with metal lids.
You can also make lecho from this vegetable, which is very suitable for any side dish. To do this, you need three kilograms of green tomato. They must be cut into medium sized slices. We also do with a kilogram of sweet pepper. We cut one kilogram of onion in half rings, and three kilograms of carrots on a grater. We take a container convenient for cooking and put chopped vegetables in it. Add half a liter of vegetable oil. All mix well. Then in the salad you need to add one liter of tomato sauce, preferably spicy. If not, then use a tomato and a little hot pepper. We cook green tomato salad for the winter for 1.5 hours. Then add salt to taste. Leave the workpiece on fire for another 10 minutes. We lay out the lecho in banks and close the lids.

We take 10 kilograms of green tomatoes and cut them into medium-sized cubes. Squeeze them lightly to drain excess moisture. We clean two kilograms of sweet pepper, one kilogram of hot pepper, three kilograms of onions, 300 grams of garlic. We cut vegetables very finely. We put the garlic in a mortar, add salt and 2-3 bunches of cilantro there. All ingredients must be crushed. Then you need 200 grams of peeled walnuts. They must also be crushed with a mortar. Why use a mortar? It is simply undesirable for nuts to come in contact with iron objects. Now you need to take a large container and put all the ingredients there. Mix them very well. Add one liter of vegetable oil to them and simmer for about 20 minutes. After this, pour 400 ml of good quality wine vinegar. Again, mix the salad, try (if necessary, add salt) and distribute to the banks. We close them with metal covers and leave to cool completely. Then we send the workpiece to a colder place.
A green tomato salad for the winter can be prepared using any ingredients. If you like a spicy dish, then add the bitter capsicum in the right amount. You can also take any seasonings and spices that you like to use in your kitchen. To make the salad more juicy, chopped tomatoes need to be aged for several hours.
