Pork stew

Pork stew is a dish made from meat slices. We will talk about him and how to cook it in this article.

The principle of its preparation is that pieces of meat are first fried and then stewed with vegetables, often in some kind of thick sauce. Russian cuisine implies stew as a dish of stewed meat slices, fish, vegetables or mushrooms.

It is believed that either beans or, of course, meat must be present in the stew. As a rule, they use veal, pork, lamb or poultry, but only young. It is important that the ratio of meat and vegetables in the stew is approximately the same. Any beans are used for this dish, but mostly it is either beans or chickpeas. Pork stew, for example, combines meat and vegetables with beans. Mushrooms are often combined with meat.

First, the meat used for cooking is separately fried. Then beans, mushrooms and vegetables are also fried and combined with meat. The broth flows into them and stewed together. Vegetables and meat are not cut very finely. Each piece should be distinguishable.

Mainly for stew, simple ordinary spices are used. But any national cuisine has its own version of cooking this dish. So, for example, in Ireland they add dark beer to it, and in Italy - wine and tomatoes.

Pork stew with potatoes is quite simple. For it, you will certainly need pork (800 grams) and a pound of potatoes, two carrots and onions, 500 grams of tomatoes and 800 grams of zucchini. As well as 3 large cloves of garlic, herbs (always fresh), salt and your favorite spices.

So, wash the meat, pat dry with a napkin and cut into small equal cubes. Put in a roasting pan with vegetable oil and fry until crusty.

Peel and wash all vegetables. Cut in the same cubes. Transfer carrots and onions to the meat in a roasting pan. Fry a little. Then add the potatoes and fry for about 6 minutes, stirring constantly. Add zucchini, mix and fry as much. Add tomatoes, spices and salt. Simmer for about 12 minutes over low heat until potatoes are cooked.

Chop the garlic and herbs and add the spices to the stew. Remove from heat and give it 10 minutes to brew.

Your mouth-watering and flavorful pork stew is done.

In Mediterranean cuisine , such a dish as the main one is often prepared. It is designed for 6 servings, and its preparation takes a little more than an hour. The main ingredient, of course, is pork (900 grams), namely its fillet. Since this is not Russian cuisine, the ingredients are not entirely national, although they have long been included in our diet.

So, this recipe for pork stew implies the presence of such products: 6 stalks of celery, ¼ teaspoon of dried thyme, ground cinnamon, rosemary and coriander, 400 grams of canned tomato. Also, two carrots and onions, 3 large cloves of garlic, ½ teaspoon of juniper berries, 200 grams of canned peas, 125 grams of madeira, pepper and salt to taste, and 3 bay leaves.

Dice the meat and sprinkle with pepper and salt. Cut one carrot coarsely, another - finely. Celery - circles. Chop onion with garlic.

Fry the meat cubes in a deep pan. After 10-12 minutes, remove them, and fry the vegetables in the same pan for about 7 minutes. Then add the berries and spices and fry for about a minute. Pour Madeira and boil. And then return the meat, add coarsely chopped carrots and tomatoes. Do not forget to stir everything constantly, otherwise the dish threatens to burn.

After half an hour (when the meat is soft and aromatic, and the sauce is thick), pour peas and stew for another 6 minutes. Allow pork stew to brew for at least 10 minutes. As a side dish, mashed potatoes are excellent.
