Meat hodgepodge is a soup, the recipe of which requires attention and careful adherence to recommendations. Better not take it if you want to save time. Soup “Solyanka meat team” (the recipe and name came to us from Soviet cooking) requires not only diligence, but also a certain amount of enthusiasm and love for cooking. Let's try to recreate it in your kitchen.

It will take you up to 5 hours to cook. In order for the meat hodgepodge (soup, the recipe of which can be divided into several stages) to acquire the perfect taste, it needs to stand for about a day. The number of products is based on a three-liter pan. Wash the calf’s tail under a stream of water with a brush, cut into segments. You can replace this product with a piece of veal (for example, a bone from the chest). Soak in cold water. Take a piece of calf tongue and, after washing, put it to the tail. Now you need to take a kidney, cut it and, pouring cold water, leave for a while. After a couple of hours, drain the water.

Boil the tongue and tail in separate pans, draining the first broth immediately after boiling. The liquid in which the tail is cooked will become the main broth for the dish. Decoction from the tongue can be drained. Now it is very important to properly prepare the kidney, because this is the ingredient with which the meat hodgepodge (soup, the recipe of which must be strictly verified) will acquire the necessary flavoring note. But this offal must be carefully prepared, otherwise the food will be hopelessly spoiled. Water in which the kidney lay for two hours should be drained. Then cut the offal into four parts, remove the urinary passages inside. Again, pour cold water, after half an hour, cut into even smaller pieces. Rinse again and soak for a while longer. Boil. Drain the water. Boil again, but this time with bay leaf and pepper. Boil for 20 minutes, drain the water - it will not be needed. Cool the finished pieces of the kidneys on a plate. You coped with the most time-consuming part of cooking! Very soon you will have a wonderful meat hodgepodge ready.

Fry the onion, cut into cubes. Add carrots, fry together. Roll the kidneys in a mixture of flour and grated coriander. Put on fried carrots and onions, brown for 10 minutes. Remove the tail from the broth, clean it of meat. Put the pulp to the fried kidney. Also do with the tongue. Boil four potatoes in the broth. Meat hodgepodge is a soup, the recipe of which assumes that all products will be cut into approximately equal pieces, it is advisable to crush the potatoes only in mashed potatoes. It is convenient to immediately boil it in the broth, and then, without removing it, crush it. Add to the existing meat products a small piece of ham, boiled boiled pork, a couple of sausages (preferably smoked). Grate 4 pickled cucumbers and as many salted tomatoes on a coarse grater.
