Celery Root Salad

Root celery has a more concentrated taste than leaf celery with a spicy hint of parsley. It is believed that it copes with digestive system disorders, and is also an effective tool for various diseases of the respiratory tract.

Root and Apple Celery Salad

Ingredients:

  • Lemon juice (preferably freshly squeezed) - 1 tablespoon;
  • Mustard (Dijon) - 2 tablespoons;
  • Mayonnaise - half a glass;
  • Parsley;
  • Celery root - 1 pc.;
  • Green apple - 1 pc.;
  • Pepper, salt.

Initially, it is necessary to peel, wash and grate the celery root. Then cut into strips a peeled green apple.

After that, mix mustard, mayonnaise, parsley and lemon juice. The resulting mixture is added to apple and celery, then put in a salad bowl. Season with salt and pepper. Before use, lettuce must be refrigerated for an hour.

Scandinavian celery root and beetroot salad

This salad got its name due to the fact that root crops have always been popular in Scandinavia. Ingredients for eight servings:

  • Beets - 6 pcs.;
  • Celery root - 1 pc.;
  • Shallots - one bunch;
  • Lemon juice - 3 tablespoons;
  • Salt;
  • Walnuts - half a glass;
  • Olive oil.

First, preheat the oven to 200 degrees. Then we make two packets of foil, in each of which we put 3 beets and bake for at least an hour until fully cooked.

While the beets are baking, peel the celery and cut into strips. Mix onion, oil, lemon juice, salt, pepper and celery. The baked beets are cooled, peeled and cut into strips, then mixed with salad. At the end, add walnuts and a little lemon juice. The dish should be infused for about an hour at room temperature.

Salad of Root Celery, Apples and Walnuts

Ingredients for 6 servings:

  • Apples - 2 pcs.;
  • Celery root - 2 pcs.;
  • Lemon juice - 2 tablespoons of tablespoons;
  • Chives - 2 stalks;
  • Watercress (ordinary lettuce can be) - 1 bunch.

For the sauce:

  • Wine vinegar (red) - 2 tablespoons of tablespoons;
  • Mustard seed - 1 tablespoon;

  • Honey - 1 tablespoon;

  • Walnuts - 1 cup;

Ingredients

  • Squids - 0.5 kg;
  • Celery - 200 g;
  • Egg - 4 pcs.;
  • White onion - 3 pcs.

Initially, you need to boil the squid for about 3 minutes. Then immerse them in cold water, carefully peel off the film and cut into strips. Dice boiled eggs. Peel the celery root and chop with straws, then it needs to be fried for several minutes in vegetable oil. Also do with onions - peel, chop and fry a little over low heat. Combine and mix all ingredients.

Salad Recipe with Celery Root and Meat

Ingredients

  • Veal - 0.5 kg;
  • Celery - 0.25 kg;
  • Onion - 2 pcs.;
  • Vegetable oil.

First, peel the celery and shred with a small straw. Boil the meat in water, which should be slightly salted. Cut the onion and fry in a pan for several minutes, then mix it with celery. We season with vegetable oil and top with veal cut into pieces. A simple and healthy salad is ready!
