- eggs - 4 pcs.;
- greens;
- dry white wine - 750 ml;
- pepper (peas).
For the sauce:
- egg - 1 pc.;
- cucumber - 1 pc.;
- egg yolks - 2;
- mustard powder;
- sunflower oil - 0, 5 tbsp. l .;
- thick sour cream of high fat content - 150 ml;
- lemon - 0, 5 pcs.;
- pepper, salt.

So, we take a saucepan, pour 2 liters of water, wine, put on the stove and wait for boiling. We wash the vegetables under running water, peel, cut into large pieces and throw into water. This is followed by coarsely torn greens, peppers (peas) and salt.
The mixture is cooked for about 30 minutes on low heat (it is necessary that the soup boil slightly). After that, remove the pan from the stove and let the broth cool.
We clean nelma from scales, fins, entrails and carefully rinse under running water. The cooled broth is filtered using gauze. We put a clean broth on the stove and throw the fish. Cook one egg to a steep state, separate the yolk and mix it with 2 raw yolks. Next, add mustard, oil, pepper, salt. From the rest of the cucumbers with the help of a small spoon with cutting ends, cut out the insides in the form of small balls. Dip them in hot salted water for half a minute and recline in a colander. There we send the finished nelma. In the meantime, boil the remaining eggs hard-boiled.
