Sterlet Recipes

The sterlet belongs to the sturgeon family. This fish was very fond of the Russian tsar Ivan the Terrible, and Peter I wanted to see it on the table every day, so the sterlet is considered a royal fish.

Although the sterlet is called red fish, its meat is white. It tastes like veal to taste and has almost no bones. The meat and especially the caviar of this fish contain very useful fatty acids for humans, which restore nerve cells and prevent the oncological diseases.

There are different recipes for preparing sterlet: it can be boiled, steamed, fried and stewed, baked, smoked and made aspic. Sometimes wine or champagne is added to the sterlet.

To make the dish tasty, you need to choose the right fish. You can check whether fresh fish or not is one simple way - put it in your palm and see if it hangs from your hand or not.

We offer you recipes for preparing sterlet. Here, for example, a sterlet baked in sea salt. You will need the following components:

* Sterlet 2 kg
* Sea salt coarse 3.5 kg
* Sea salt shallow 1 kg
* Mustard (seeds) 100 gr
* Olive oil 1 tablespoon
* Ground white pepper, salt

Before you prepare a sterlet, you need to defrost it, remove the gills, viscera and clean, and then rinse, remove the dorsal fin and screech, hooking it with a fork near the tail. The fish is dried with a towel and rubbed inside with salt and white pepper. Pour sea salt, mustard into a cup and fill it with a glass of water. The mixture is spread on a baking sheet and put the fish on it with the abdomen down.

With olive oil, you need to spread the back of the fish and sides, and then, gently pressing with your hands, sprinkle the sterlet with the remaining mixture. A baking sheet with fish is put in an oven preheated to two hundred degrees and baked.

Cooking sterlet in the oven will take about half an hour. Ready fish is removed from the oven and skin is removed. If the salt has baked, then the crust formed must be broken by tapping on it with a hammer. Before serving, sterlet is decorated with greens and cherry tomatoes.

You can bake fish in the oven in parchment paper - it will not let the juice flow out, and the fish will turn out to be juicy and very mouth-watering. This sterlet recipe is very simple. You need to take the fish, pepper it and put it on a sheet of parchment. Top with basil or parsley and a few peas of allspice. After that, the fish is wrapped and put in a preheated oven to 180 degrees. After 45 minutes, the sterlet is cooked in the oven and the fish can be served on the table by pouring lemon juice on top of it. You can decorate it with lemon slices.

The recipes for preparing sterlet on the grill are also not complicated. Here is one of them.

* Fish 1 kg
* Butter 100 gr
*Breadcrumbs
* Lemon 1 piece
* Mayonnaise or tomato sauce 250 gr
*Salt pepper

Having cut the fish into portions, you need to remove moisture with a napkin, rub it on all sides with salt and pepper, grease with butter and bread in breadcrumbs. Fish can be fried in portions or whole carcasses. To do this, you need to remove the fins of the fish and flatten, without separating the halves from each other. After this, the sterlet must be dried with a napkin, salt and pepper, sprinkle with oil and roll in breadcrumbs, and then put on the wire rack and put in a preheated oven. Serve the finished fish with fried potatoes, garnished with slices of lemon.

There are, of course, very complicated recipes for preparing sterlet, for example, fry vegetables and stuff fish with them, alternating with layers of cheese and shrimp, or cook sterlet in champagne sauce. But still there is nothing better than a grill or coals, and for this, it is enough to sprinkle the gutted fish with lemon juice, season with seasonings and salt to taste.
