Almost any holiday is impossible to imagine without a good table, and not everyone likes a table without meat dishes. That is why pork has always been popular, despite the fact that it is quite fatty and high-calorie meat. The most delicious and nutritious dish is braised pork with gravy. This dish is quite simple to prepare and the products used are the most affordable, but the taste is excellent. In addition, stewed pork is much healthier than fried meat and tastier: languishing among vegetables, it becomes fragrant and tender. We offer you to get acquainted with the recipe for stewing pork and take this recipe into service. Of course, it will not be a discovery, but it will bring new notes of taste that you did not know before into the familiar dish. Before proceeding with direct preparation, prepare the following products:
- 800 gr. pork tenderloin ;
- 4 tablespoons of vegetable oil (preferably olive);
- 2 medium-sized onions;
- 2 carrots;
- 5 pieces of large potatoes;
- 1 tablespoon with a hill of flour;
- 100 grams of green peas (preferably frozen, but not necessary);
- 2 cloves of garlic;
- 1 glass of tomato juice;
- black peppercorns, bay leaf, salt and soy sauce - to taste.
The pork pulp should be oily enough and it is better to buy it not in the supermarket, but in the market. From animals grown on natural fodder, meat is tastier and healthier, especially since you can always find suitable meat on the market. Also choose a suitable dish - it should be with thick walls. It can be a pan, cast-iron frying pan, deep stewpan or a cauldron. The best option is when braised pork is cooked in a cast iron, some city dwellers use it even in an electric or gas oven. Although in some cases stewed pork in a slow cooker is the easiest and most affordable option. So, we heat the stewpan over a fire and pour enough vegetable oil there so that our dish does not burn. The amount of vegetable oil can be slightly reduced if the pork is very oily.
While the oil is warming up, the meat needs to be washed, dried and cut into small pieces. Then you need to fry it in hot oil until golden brown, but just do not overdo it, as this can lead to burning of the product. No need to try hard to fry it, as the meat becomes dry. At this time, peel the onions and carrots, chop the onions in half rings, and carrots in circles or slices. Finely chop the garlic here. Braised pork will only benefit if, in addition to traditional vegetables, you add string beans or bell pepper to it - experiment! Next, you need to remove the meat from the stewpan, and fry the onion and other vegetables on the remaining fat. Then sprinkle the vegetables with flour, put the meat and mix.
Cut the potatoes into a large cube and put on top of the meat with vegetables. Add peas, peppers, lavrushka, salt to taste, cumin can be added if desired. Then add soy sauce, tomato juice (preferably homemade) and pour meat broth on everything, and in its absence - boiling water, so that it covers all the contents, but no more.
Bring the contents to a boil, then cover and put in a preheated oven on a small fire so that the meat and vegetables are simmered, rather than boiling.
