A light summer soup with potatoes and tomatoes is ideal for both an adult and a children's menu. It contains a lot of vegetables, so it turns out not only tasty, but also healthy. In modern cooking, there are many recipes for making such soups. The simplest of them will be described in today's article.

Lean option

Soup with potatoes and tomatoes, prepared according to the technology described below, does not contain a gram of meat. Therefore, it can be safely called vegetarian. To cook such a dinner, check in advance whether there is in your kitchen:

  • 3 ripe large tomatoes.
  • 1.2 cups of wheat.
  • 3 potatoes.
  • A couple of tablespoons of vegetable oil.
  • 100 grams of any processed cheese.
  • Onion.
  • A tablespoon of dried paprika.
  • Salt, greens.

Process description

This simple soup with tomatoes and potatoes is cooked in just half an hour. This speed is due to the lack of meat, requiring a long heat treatment. Two and a half liters of filtered water are poured into the pan and sent to the stove. After the first bubbles appear on its surface, carefully washed wheat groats and chopped potatoes are immersed in it. All this is boiled on low heat for ten minutes.

Then, processed cheese is sent to the pan, in which a light vegetable soup with potatoes and tomatoes is prepared. After it is completely dissolved, pre-cooked onions and fried tomatoes are added there. All this is salted, seasoned with paprika, brought to a boil and removed from the burner.   • 300 grams of chicken.
  • 1.5 liters of water.
  • A pair of potatoes.
  • Medium carrot.
  • A pair of tablespoons of rice cereal.
  • The stem of leek.
  • 4-5 fresh tomatoes.
  • A tablespoon of vegetable oil.
  • Salt, spices and lemon.

Washed chicken is poured with cold water and sent to the stove. As soon as it boils, the resulting foam is carefully removed from it and the fire is reduced. Prepare the broth for half an hour. Then the chicken is carefully removed from it, and the liquid itself is filtered and returned to the stove.

Chopped potatoes are loaded into the slightly salted broth and cooked for just five minutes. Then they put washed rice there and immediately mix it. Otherwise, the cereal will stick together and settle to the bottom.

Thinly chopped carrots are fried in a separate frying pan. Then add chopped leek and chopped tomatoes, which were previously peeled. Stew vegetables for five minutes, not forgetting to stir occasionally. Then they, together with chopped meat, are sent to a pot with broth and brought to readiness.
