Pancakes from the liver

Cooking liver pancakes is not difficult. They are eaten by themselves or seasoned with filling and rolled into rolls, and you can also make a liver pie based on them .

Products

For cooking, you need 1 kg. liver, 3 raw eggs, sifted flour, 250-450 ml. milk, salt.

For the filling, carrots, onions, any mushrooms, egg, boiled rice are suitable. All these components are mixed together, or in arbitrary variations, at your own discretion.

Liver preparation

Take a fresh liver and soak it for an hour and a half in milk at the rate of 1 liter. milk per 1 kg. the liver. In milk, if desired, add 1 tsp. salt. Soaking is necessary in order to stretch the bitterness, to make the liver soft and tender. If you have only fat milk at hand, dilute it with boiled cold water for about 1/1.

Fold the soaked liver into a colander, peel off the skin, veins and tendons. Slice and grind in a blender or scroll through a meat grinder. If you are making pancakes from the liver for a child or an elderly person, then first use a meat grinder, and then a blender.

Test preparation

Beat the eggs in the foam and add to the liver, crushed into a paste. Salt, if you like spicy dishes - pepper, add half a glass of milk and mix thoroughly. Now enter 200 gr. sifted flour and knead the dough, it should look like dense sour cream.

Then, introducing milk in small portions, dilute the dough to a more liquid state, so that it pours in a trickle. Pancakes from the liver can be from 0.3 to 0.8 mm thick, if more, then it will be difficult to bake them, when turned over, they will break and become unstable for wrapping the filling.

Baking

Bake pancakes from the liver should be the usual way. Heat a pancake pan, lightly grease and pour pancakes with a large ladle.

The first side is fried until the top of the pancake is completely boiled, there should be no spots of raw dough on it. Fry the other side for 15-25 seconds, until a light blush is obtained.

Lubricate the removed pancake with melted butter or grease the whole circumference with the filling and wrap it in a roll.

Filling

Vegetables for the filling are fried in butter, all separately. Onions can be chopped finely or in rings. Rub carrots on a coarse grater or cut into thin strips. Boil eggs and rice. Finely chop eggs.

Boil the mushrooms, then fry in cream margarine or butter.

You can use other vegetables, if you think they are compatible with the liver. Pancakes from the liver will be very satisfying if they are stuffed with meat filling.

What to serve

Liver pancakes, the recipe of which was given above, can be eaten both cold and hot. Stuffed pancakes can be cut into small sticks of 2-3 cm. And served as a cold snack to the festive table. As a decoration and to brighten the dish, chop finely the greens and sprinkle the rolls with it. Lay them on the leaves of fresh watercress or Beijing cabbage, which may well be used as components of the filling.

They will go well with butter or sour cream. Since this is a salty dish, it would be quite appropriate to serve them with some sauce, including mayonnaise or ketchup. The most basic version of the sauce is adding garlic to mayonnaise or sour cream.

From liver pancakes, you can make a layer cake. To do this, you need to shift the pancakes together with meat or any other filling, grease the egg with a slightly beaten fork, sprinkle with grated cheese of a sharp or salty variety and bake in the oven for 12-15 minutes.

Without baking, you can make a pie, if you do not add the filling, simply grease each pancake with mayonnaise, seasoned with garlic, and stack them on top of each other. Allow to stand in the refrigerator for about an hour and serve.
