How to cook beef basil with pickles

Beef Azu with pickles is one of the best dishes of Tatar cuisine. In the old days, horse meat was used for its preparation, and less often, mutton. Today, basics are usually made from beef. Literally, the name of the dish means minced meat in a spicy sauce. We offer a classic recipe for cooking azo from beef.

Beef basics with pickles

Ingredients:

  • a piece of beef (lamb) on the bone weighing about 700 grams;
  • pickles - several large pieces weighing 200 grams;
  • fat tail fat or vegetable oil - 100 grams;
  • onions - 1-2 medium-sized heads;
  • meat broth or plain water - 1.5 liters;
  • potatoes - several root crops with a total weight of 500 grams;
  • fresh (canned) tomatoes - 3-4 pieces;
  • parsley, salt, cilantro, pepper, seasonings.

Cooking technology

Aza of beef with pickles is prepared as follows.

Peel the pickles and cut them into strips. Peel and chop the onions in half rings. Heat a deep cauldron over a fire, put chopped lard in it or pour in oil. From the fat you need to melt the fat, catch the greaves and set aside.

In hot oil, throw the meat cut into large pieces. SautΓ© it over high heat. It should form a crust. The meat does not need to be fried until cooked, it is necessary that it quickly brown and stop giving juice.

After the meat is fried, remove it from the cauldron and set it aside. In the remaining fat, spasser the chopped onion. Add oil if necessary. Once the onion is fried, return the meat back to the cauldron. Salt it, sprinkle with pepper, seasonings.

While the meat is stewed in a cauldron, chop the tomatoes. Gather the juice released during the cutting carefully and put it in the cauldron together with the pieces. Simmer with the lid open until the tomato juice has evaporated.

Pour meat broth or plain water into the cauldron. Depending on how thick the basics of beef and pickles you want to get, add the right amount of broth. Cover the container with a lid and simmer for 40 minutes.

In a separate frying pan on heated oil, lightly let the pickles lightly. You can do this in a small saucepan and pour a little broth instead of oil. Stew cucumbers for 15 minutes.

7 step

Peel the potatoes. Cut it into pieces of any size. Fry in oil until half cooked.

8 step

Check the readiness of the meat. If it is well stewed, then we add pickles to it (the broth should be drained from them beforehand) and chopped potatoes. You can put sugar to your taste. Cover the cauldron with a lid, simmer for about 15 minutes.

9 step

While the basics of beef and pickles reach readiness, chop finely the greens and garlic. Season the finished dish and serve.

A similar composition of products will be needed to prepare the basics in pots. All ingredients must be fried until half cooked in the same way as described in the main recipe. Then lay the products in a pot in layers: meat with onions, pickles, tomatoes, potatoes. Pour all over with hot meat broth. Place the pots in the oven for 50 minutes. Set the temperature to about 200 degrees. Sprinkle with chopped herbs before serving.
