How to cook shulum: recipe with barley

Shulum is a rich and thick soup, which is prepared from game. Moreover, there are many ways to prepare this dish, which may differ not only in the number of ingredients, but also in their composition. It even comes to the fact that there is a recipe for shulum from beef and even chicken. However, real gourmets and hunters, who consider this dish their professional, prefer to cook it only from game, or rather, from poultry, although in the Caucasus it is made from lamb. There are also a lot of opinions related to what kind of cereal to put in it and whether it is worth doing at all. Ingredients

For cooking you will need:

- wild duck - 1 pc.;

- onions - 3 pcs.;

- potatoes - 6 pcs.;

- tomato - 2 pcs.;

- salad pepper - 1 pc.;

- pearl barley - 0.25 cups;

- garlic;

- dill;

- pepper;

- salt;

- spices (at the discretion of the cook);

First of all, you need to pluck the bird. Then she was gutted and scorched at the stake. So you can save the meat from the remnants of feathers and give it a characteristic aroma, which is so famous for shulum. The recipe for this dish involves the use of offal, but since parasites can be found in the liver of a wild duck, we’ll leave only the carcass, heart and stomach. Then the carcass is cut into large pieces.

When the meat has been prepared, we put a cauldron on the fire, in which we place the duck and bay leaf. After that, fill it with water.
