What is tan
Tang is a rich Caucasian history drink. They make it from natural buffalo milk. A traditional drink recipe includes 1 part water and 2 parts yogurt. This mixture is salted, seasoned with a variety of herbs and spices. The addition of natural honey is also allowed.
A drink with a composition of fresh herbs or pickled pickles has a richer and more interesting taste. It is customary to drink the finished tan immediately, since it is stored for no more than a day in the refrigerator.

The benefits of tan are hidden in its composition. Such a product contains many trace elements, including phosphorus, zinc, magnesium, calcium, potassium, as well as vitamins K, PP, A and D. The main microflora of the drink is Bulgarian milk stick, which was named after its discoverer. The product helps with many diseases and problems with the gastrointestinal tract. In addition, the drink can reduce blood cholesterol and improve kidney function.
Tang is often used as a remedy for a hangover. They use it not only as a separate fermented milk drink, but also add it to cold summer soups. It is used as the basis for tortillas and dough, as well as for pickling fish and meat. The product is popular not only because of its benefits, but also because of its extraordinary taste.
Okroshka recipe in tan or ayran
To make such a cold soup you will need:
- 1.5 l of tan, ayran or serum;
- 5 potato tubers;
- 300 g ham;
- 5 large eggs;
- 2 cucumbers;
- bunch of onion feathers;
- a bunch of dill branches;
- salt.
Potato preparation
To cook okroshka in a tan, prepare all the ingredients. Wash the potato tubers, place in a pan and boil in their skins. For greater benefit, you can steam them in a slow cooker or a double boiler. Potatoes will turn out more fragrant and strong in structure. Tubers take about the same average size. In a double boiler, they cook for 20-25 minutes. Cool, peel and chop the prepared potatoes with straws or cubes. If the pieces stick together during cutting, separate them.
What to do with eggs
It is difficult to imagine an okroshka in a tan without eggs. You can boil them in advance or during the preparation of other components. Place the eggs in cold water, add a little salt. Cook them until cooked. The process takes from 8 to 12 minutes. It all depends on their size. When the eggs are ready, place them under a stream of cold water. Chop the cooled product into cubes.
There is another way to add eggs to okroshka in tan. Separate the protein from the yolk and rub it on a coarse grater. This component needs to be added to other okroshka products. As for the yolks, grind them and use for dressing in combination with sour cream or mustard.
Preparation of the remaining components
Cut the ham into thin strips or cubes. Instead of this component, you can use other types of sausages, for example, Sausage “Dairy” or “Doctor's”. Meat is also suitable. Better add baked or boiled low-fat beef to the dish. In okroshka at Tana there can be several varieties of meat products.
Wash medium cucumbers well, dry, cut into strips or cubes, like other components of the dish.
What greens to add
As greens for such okroshka, you can use green feathers of onions and dill branches. In addition, for fans, you can add parsley, mint, cilantro to the dish.
Wash plant branches in running water and dry. When cooking okroshka, take only the tender portion of mint leaves, dill and parsley. Rough stalks cut or cut off. Finely chopped selected and prepared greens.
Final stage
Transfer prepared and ground components of okrosha into a deep container. Salt the workpiece is not recommended. Tan is gasless and carbonated. The latter option will give okroshka a more interesting taste. If you purchased a tan without gas, you can mix it with a small amount of mineral water.
