Anyone who has long loved the “blue ones” probably knows at least one salad of eggplant and eggs with mayonnaise. The one who only recently discovered in himself a love for this vegetable, hardly managed to get a similar recipe. It's a pity! A good salad of eggplant and eggs with mayonnaise can make the everyday table more palatable, and enrich and diversify the holiday. Simple salad
The most modest appetizer, which practically does not require ingredients: a salad is made of eggplant and eggs. With mayonnaise, naturally. About a kilogram of the main component is cleaned (the main bitterness is contained in the peel), cut into strips, salted and set aside for half an hour. Then it is thoroughly washed, decanted and dried, after which it is mixed with two raw eggs and stood for another hour in this filling. At the same time, two onions (quarter vinegar, salt, sugar, pepper - the way you like) are pickled in quarter rings. The eggplants are fried to a beautiful crust, the marinade is filtered off from the onion, both vegetables are mixed with chopped garlic and herbs and seasoned with mayonnaise. Fast and incredibly delicious!
Cheese and Eggplant Salad
If you don’t like too simple an eggplant salad with eggs and mayonnaise, we complicate and complement the recipe. The blue ones are processed in the same way as in the previous case. We fry over high heat so that they do not fall apart. While the eggplant cools down (and excess oil flows at the same time), two eggs are boiled and chopped, Russian cheese is rubbed - about a quarter kilogram, preferably on a Korean grater. In addition, three large tomatoes are cut (peeling is not necessary at all). Three garlic cloves crush and combine with a package of mayonnaise. Now we are building the salad directly. The first layer is “blue”, the second is mayonnaise, the third is half cheese, the fourth is tomatoes, followed by eggs, the last is the remaining cheese. Each layer is smeared with mayonnaise. The crown is sprinkled with walnuts, and a delicious salad is hidden overnight in the bottom of the refrigerator for impregnation.
Inexpressible Delight
If you are planning to cook this salad, eggplant, eggs, onions, mayonnaise - not all that is needed. The dish is multi-component, but it is very tasty and quite light. A third of a kilo of “blue ones”, traditionally spared from the skin and cut into slices, is quickly allowed to become hot in hot oil. A pair of onions is cut into cubes; as the eggplants become soft, they pour in to the vegetables - and then everything is taken out of the pan. Two eggs and as many apples crumble; apple cubes are sprayed with lemon, so as not to darken. All prepared components are combined, canned peas are poured (approximately half a can), and the salad is poured with dressing from an equal amount of sour cream, mayonnaise and mustard with the addition of crushed garlic. Garnish with tomato circles, insist for half an hour in the refrigerator - and you can surprise people.
"Men's joy"
Strong sex rarely welcomes dishes in which there is no meat. For men, you can prepare a salad of eggplant and eggs with mayonnaise, which will fully meet their tastes. Chicken legs are boiled, cooled and freed from meat (you can cut, you can tear with fibers). Two eggplants are peeled, diced and fried (but not until brown!) Three steep eggs are also diced; a small white onion and some parsley are chopped. All components are combined in a salad bowl. Preparing a sauce at the rate of a spoonful of tomato paste for two tablespoons of mayonnaise. Salad is seasoned with filling, salted and pepper. An hour of insistence - and all the men in the house eat appetite for a tasty meal!
